    Amazing. I learned so much from this video! I was looking for more info on Marra Forni and got drawn in. You won't be disappointed with the wealth of knowledge shared by Tony. 👍🔥

      Yeah I mean idk about the goat when I worked with him he was a great pizza man but not the goat and his back story isn't accurate also he doesn't own his restaurant he's a figurehead after about 15 years in the pizza industry I worked for him first on the woodfire oven for dine in where I was hired he didn't like me explaining to customers how I was making the pizza or what I was doing so he moved me to morning prep with nights making slices and on the coalfire oven but in the mornings at his students would come past my table (which is why I think he put me there) and he would introduce me on every tour and ask students to ask me questions (because I was paid by the international school of pizza every check except my first 1 why I don't know for sure) I would just explain edging stretching slapping and tossing and let any participants who wanted to take part in making these pizzas(most of which always took advantage because they are paying essentially 1k per hour to be there) he complained that I was explaining everything to the students but then made all of my shifts in this prep time in the mornings (hey I love making pizza prep cutting veggies rolling dough whatever I love it) after I had become more familiar with the restaurant I saw he was putting mushrooms in the dough recipe to which I told him he should tell customers because of allergies to which he accused me of trying to steal his recipes for which he himself had changed my shifts to prep instead of making to which I was as fast as anyone in the store after a few drunken late night texts accusing me of trying to steal his recipes again I started working as a personal pizza cook for Twitter and quit Tony is an amazing pizza man but I learned literally nothing in my 6 months there the pizza is excellent at Tony's but the best I don't think it was in the top 3 places id worked at but probably the top 5 he's got a wealth of knowledge he's almost as fast as I was at the time he's top tier for sure but not the goat

    Love Tony so much. His passion to make pizza is outstanding. I watching his pizza vids about few years and I learned very helpfull stuff how to make good pizza. This guy is pizza master!

    More great info from Tony G!! Skin side down on mozzarella - shiny side up on basil - honey in the raw sausage--no seeds in sauce---great tips!!!

    @19:10 as a former cook for tony he uses 6&1 and 7 11 combo pretty much the industry standard sauce idk if its an "old world" flavor

    This video has 2 dislikes? Really? Do you know who this he is? What's he's done? What he is doing in the industry? This man is essentially the American Grandmaster when it comes to pizza. Plus, he's an extremely nice and humble gentleman considering the level of influence he brought to the west coast pizza scene.

      This guy is one of the greatest ever, presenting invaluable information. There's always gross ignorance and the decidedly unappreciative out there. The bell curve of humanity shows its opposite end from time to time.

    @23:00 again as a former cook for Tony all of the granite surfaces of his restaurant were chipping and fragments from them where going into the food which he said added flavor and told me to respect the craft

    Always Great Tony! I have a question about Flour, do you experiment with all types of flour? I just recently had some Artisan Bread flour...fresh ground sent to me and I am liking the Flavor profile! Probably because Artisan and fresh Ground? I have a wood fired oven in Back yard. Any suggestions of some Flour recipies I can play with and should i try to stay above 65% Hydration? Or does it change with Protein content?
