This method, is probably the best to install HA on a Proxmox server. Especially for me as a beginner, I was able to follow the commands and installation without any issues.

Thank you for the comment setting the ip of a vm is not something that you do in Proxmox it is configured at your router or in the VM. For HA here is a wright up that I found for doing this rapidlydigital.com/assign-a-static-ip-to-home-assistant/

I'm using Proxmox 6 and it doesn't have the option to select/deselect "Pre-Enroll Keys". Subsequently Home Assistant did not boot at the end of the tutorial. Do I need to update Proxmox or is there a different way?

I have never done this with Proxmox 6 I would upgrade. I have videos on 6 to 7 and 7 to 8. It looks like you can use the command line the tag looks to be pre-enrolled-keys= (default = 0) here is the Doc i found this in pve.proxmox.com/wiki/Manual:_qm.conf

2:10 - why you are removing disk?

you remove the Default disk so that you can add the HA one in. you dont need to do so but it will make for a cleaner config file
