I've been baking bread for years, and the easiest way from my experience is using the standing mixer, like the green one that you have. For 8 cups of flour, just add 1 teaspoon of salt, 2 teaspoons of dry yeast and some olive oil. I also like to add a little bit of turmeric, for its anti-inflammatory properties, but also for color. This quantity of flour usually needs 3 to 3 and a half cups of warm water, let it mix for 10 minutes. I like my dough to get that elasticity when you touch it, like the fresh pizza dough. Then I let the dough rest in the mixing bowl, in my microwave (covered with a towel), for 2-3 hours, when I transfer it in the baking pans. The second rise is about 40-50 minutes. I bake my bread at 400 F, the time really depending on the way you form it (buns vs loaf). Keep in mind that bread dough should have at least 190 F inside temperature, I usually get mine at 200-205 F. Just try it again and again, I promise you practice will make you an expert 🥰🥰🥰

@shannonriver I think 8 cups is the maximum allowed for these mixers. You'll get 2 large loaves out of it or about 16 buns, decent size. As you may know, when working with flour you might need to add a little more water, flour and humidity have their own way of co-existing 😋, but keep in mind the consistency and elasticity of the pizza dough as a reference. Another tip is to broil your bread or buns (on high) when it's done, not more than 30 seconds to 1 minute. Watch it, it can burn really quickly! You'll get an amazing crust and taste just doing this. I'm really glad that you decided to bake your own bread, you won't buy anything else from the store and you'll save tons of money! 🤗♥️♥️♥️
