TJ, thanks for this one. I was in Taiwan once back in 1995 and I always love seeing night street food videos like this. Now of course, things have changed a ton since I was there 30 some odd years ago, but overall it's still just stall after stall of incredible food. Both western influenced and Taiwanese/Chinese/Asian foods naturally. I will say, I LOVE beef/chicken chow fun. It's literally my favorite food I've eaten - and the absolute best chow fun I ever had was in Taiwan at some mom and pop spot not to far from that night market. I doubt the restaurant is still there after all this time, but my word was it good. And unlike a lot of Chinese spots here in the US as you know, they wok hei the shiiiiiii out of their ingredients :D
That huge fried chicken looked so delectable and reminded me of the old-school McDonald’s hashbrowns served out of a paper envelope like that! Such a fun munching video with your friends❤
The chicken is my go too every time I’m in Taiwan or HK. I would say the Hot Star chicken and Mammy eggettes are top of the list. A close third would be the pork buns from Tim Ho Wan
Your friends are all so open minded and such adventurous eaters! I'm glad you even went to try the soup version of stinky tofu, which is also very good but mostly only locals are able to accept it.

Of all the fiod you try that I look forward to is the stinky tofu with duck blood. I love duck blood. I can skip the entire stinky tofu for the duck blood.

One way to overcome the duck blood aversion is just to think of it as another savory milk pudding, as technically milk is just filtrated blood and another source of protein.
OK as a vegan who has visited Taiwan a couple times, I have a Western opinion on stinky tofu 😂 The deep fried version with hot sauce and pickled cabbage is obviously the best way to eat it, and delicious, although I know people who still think it tastes too rotten. I tried stinky tofu in a vegan soup for the first time last year, and was literally gagging as I tried to swallow the chunks 🤣So there are different difficulty levels of stinky tofu. To be safe stick to the deep fried LOL xoxoxo
