- INGREDIENTS
2 pork tenderloins
2 puff pastry sheets
2 bacon blisters
2 garlic cloves
2 onions
600 g mushrooms
400 ml cooking cream
300 ml white wine
Partridge pate (any type will do)
1 egg
Salt
Pepper
Nutmeg
Olive oil
PREPARATION
✅ Start by chopping the onion in the chopper and fry it.
✅ Meanwhile, chop the mushrooms as well and when the onion is well fried, add them and mix well over low heat.
✅ Now add the two garlic cloves, a little pepper and a little salt. Stir and add the soft wine, now let it cook until the alcohol evaporates and everything reduces a little and becomes a dry dough.
✅ Next, we add the pate and mix it well into our mixture. Once our dough is well mixed, we will set it aside and keep it cold for 30 minutes.
✅ Meanwhile, we will season the sirloins and seal them well in our pan.
✅ Now it's time to put everything together. We start by spreading the puff pastry, then we will put the bacon slices and put our dough on top. We will leave a little of it in a saucepan to later prepare a sauce.
✅ To finish, we will put our sirloin and roll it well with the puff pastry. We will put it on our baking tray and paint it with egg.
✅ We put it in the oven already preheated to 200 degrees for 1 hour, checking that it does not burn on top, we will remove it and put the heat on top. To see how the sirloin is doing, we can use a metal needle, pricking it and seeing if it is better or worse, as well as if it is more or less hot.
As for the time, it is usually calculated to be about 40 minutes per piece.
✅ While the sirloin is cooking, we will prepare our sauce by adding the meat juice, the cooking cream and a little nutmeg to our reserved saucepan.
✅ To finish our dish, we will cut the sirloins into slices and put our sauce on top.
