Open the preset tab, and you'll see the sound of each track on the right. Drag and drop snare sounds from any preset on your snare track to replace only that. There's also a random button to reroll only that snare sound
Yes, either as audio or as midi (though, midi loses some information, like the pitch modulations for example), but I préfère to route each sound to a separate track, so I can mix them independently while keeping the flexibility of the plugin.

It‘s in the manual, also some videos explain that. The workflow depends on your DAW and the drum machine.

I found the midi and multi track features to be extremely weak. Also no scale support in pitch generation.

With ableton you can convert audio to midi really easily
Just a matter of dragging an audio sample into a midi track and it will extract the midi
