I live in Western Maryland. We are 10 miles from PA. My grandmother made these when I was a kid. I miss them so much. Nobody that sells them locally uses this recipe. THIS is the correct recipe! Thank you for sharing. I have to try these on my own.

Helga, I’ve been meaning to write for a few weeks. I live in AZ but grew up in NW PA. My 84 yo Dad and step mom are here as well. My grandma always had Christmas Eve in Harrisville, PA and always with these cookies; raisin or apricot. I wanted to create these for Dad and came across your wonderful recipe and video. They were great cookies and inspired many memories of Christmas Eve.

The cookie looks nice and soft and cakey. I make drop sugar cookies that I always called cakes. I used to buy raisin filled cookies at an Amish market, til I found a good recipe in a church cookbook. Most of the cookie recipes I have were my grandmother. I wish I had made videos of her making Christmas cookies before she passed.

My sister-in-law comes from Pennsylvania. Her mother is Italian and her father was Polish. Every Christmas her mom would make these and many other types of cookies and ship them to us here in California. The raisin filled cookies were my all-time favorite. I’ve been looking for a recipe ever since I was a little girl. I’m going to try these I’ll let you know if it’s the same cookie. Thank you so much for putting this out there.

You have really aroused some memories for me with this recipe. My grandmother used to make these cookies when I was a kid. I do not have her recipe but now I have yours! My family is from the Johnstown/Somerset area and Grandma was a coal miner's widow. She really could bake!

So, that sounds like the Amish Ketchup recipe. it's delicious. These can be tweaked spice wise to be what you want. There are other similar recipes, but this is a good one. And, different folks called things different names. Like PA Dutch chili sauce isn't a red sauce like down south here, it's more of a sweet and sour veggie relish.
      Amish Ketchup-
6 ribs celery, trimmed, coarsely diced
      2 medium onions, peeled, diced
      1/4 cup water
3 pounds Roma or other meaty tomatoes, stemmed and quartered
      5 tablespoons apple cider vinegar
3/4 to 1 cup dark brown sugar, to taste
      1/4 tablespoon ground allspice
      1/2 tablespoon ground cloves
      1/2 tablespoon celery seeds
      1 teaspoon ground mace
      1/4 teaspoon salt
      1-1/2 cinnamon sticks
      1. Place celery, onions, and water in a medium saucepan over medium heat; cover, bring to a boil until the vegetables start to soften, about 15 minutes.
      2. Meanwhile, cook the tomatoes in a large non-aluminum saucepan on medium heat, partly covered, until very soft, about 25 minutes. Add cooked celery and onions; continue cooking until all the vegetables are completely softened, 15 minutes.
      3. Strain the mixture through a sieve into another non-aluminum saucepan, pressing down firmly to get out all the liquid. Stir in vinegar, brown sugar, and spices. On medium-high heat, bring pan to a boil. Continue cooking, stirring, to be sure ketchup does not stick to the bottom of pan, 15-20 minutes. Remove and discard cinnamon sticks. Allow to cool; ladle into jars.

This is my first experience with your channel and I love your down to earth demeanor including the 'buttermilk hack'!
Now for my question which make me anathema to you and your followers.
Can I get away with margarine rather than butter? Please remember your buttermilk hack as you judge me...😉

    • @PennsylvaniacookingBlogspot
      @PennsylvaniacookingBlogspot  4 роки тому +1

LOL, thanks for watching and being here! OK...about butter and margarine. You can use margarine but it will be different because it's basically oil. Butter is great for baking. It adds a nice flavor and texture for cookies and pastries, because of the fat it contains. Margarine can also be used for baking, but it doesn't have as nice of a flavor as butter. ... So if you decide to substitute butter for margarine in a baking recipe, the cookies, etc. will brown faster. In baking, melted margarine could work in recipes that call for melted butter, but in recipes that call for softened butter, swapping in tub margarine may change the texture; for example, cakes will be less tender, and cookies will generally spread out more and be less crisp. But when you're baking, butter triumphs over margarine every time. For cakes, cookies, and pastries, butter (unsalted, that is) provides richer flavor. ... Margarine, which can contain more water and less fat, may make thin cookies that spread out while baking (and may burn). If you have dietary restrictions and need to use margarine or prefer it, just beware in baking time and the outcome will be a bit different.
