  • Bajan Bittle - A Culinary Excursion
    Fruit Cake
    INGREDIENTS
    2 ½ lbs Fruit
    4 oz Rum
    8 02 Cake Wine
    8 oz Fat
    12 Oz Sugar
    4 oz Raspberry Jam
    3 tsp Spices
    1 tsp Baking powder
    1 ½ lbs Flour
    1 tsp Salt
    METHOD
    1. Combine rum and cake wine and set aside
    2. Grind fruit and place in a saucepan; add jam, spices and salt
    3. Cook slowly for 15 - 20 minutes
    4. Add half of the rum & wine mixture to the fruit
    5. In a mixing bowl, cream together butter and sugar and add eggs one at a time
    6. Add cooked fruit, flour and baking powder
    7. Place mixture in a lined cake tin and bake at 275F until centre is firm, but moist
    8. Remove from oven; use a skewer to poke holes in, the cake pour the remgining rum & wine mixture over the cake
    9. Let set for 24 hours

    Our mum and we still do this today is when we take it out the oven while it's still warm we pour rum or pork wine over the top and give it time to absorb it (we let it rest)by doing so it more rummy and moist

    Sorry saw the amount of eggs at end of video. The eggs were omitted in the description box. You suggested 4oz of flour for every 1lb of fruits, since you use 2.5lbs of fruit should the flour use not be 10 oz in stead of 1.5 lbs as in the recipe?

      6 eggs would be ok it is base on 8 Oz flour 8oz sugar 8oz of butter

    You did not tell us the quantity of eggs. The flour should be 8 oz, the sugar 8 oz the fat 8oz and eggs 5 we should not try to change things to please ourselves. Fruit cake will always taste great because of the fruit. Where is the Guinness stout, like the gentleman asked. The cake had very good color, so I think other things went in that were left out.       Recipes are a guide - its up to you to change things around to suit your personal taste.

      @@msg4141 when baking a recipe has to be perfect, if not your cake will sink in. If you are cooking you can add anything, but baking is a science, so things have to exact. 5 eggs is 250 grams or half pound, so every thing has to weigh the same.

      @@jamaicaninthekitchen4358 I hate when these people just throw up a recipe and do not follow the formula. The cake will taste great because of the fruit he put 24 ozs of flour, yet he use 8 ozs of fat every thing should be 8 ozs flour, sugar, the only exception is the coloring and alcohol.
      Every thing is base on a lb.
