- Dave Arnold of Booker & Dax in NYC and creator of the Searzall came over to my place to demo the prototype for his new product, the Spinzall, a countertop centrifuge aimed at professional and prosumer cooks.

World-class bartender in the room, makes own drink.
LOL Cool J yeah wtf
lol
I call him a Mad Mixologist.
Informative and casual - I like this format, no need to super polish everything.
dave arnold is the best can't wait to get my spinzall
It's not going to be on my wish list...probably ever...but I'm glad it's out there. Excited to see what the future holds.
Dave Arnold is a Mad Mixologist and I love it.
I need this. cannot wait until I can afford
Super interesting. I would have to be REALLY into cocktail/flavor oil nerdery to actually grab something like this.
Kenji - this is such an awesome video and it's great to see you two interacting. What do you think about using the ISI whipper to make an infused oil? Isn't it so much easier? I know Dave would say that the yield is not as great as the centrifuge. But using NO2 in a whipper is much less real estate than the Spinzall.
Very cool. Can I use this to blend cannabis and alcohol together then run through this to get a clear tincture???
For all the ppl asking why you should use it: you can clarify fruit juices. The more clarified a liquid is the more carbonation it can absorb and it looks cooler
make us a rotovap that doesn't involve lab-grade glassware prices
sounds like he's been doing THC extraction
How did I miss this by 1 week?
this is cute. You guys are awesome
Kinda cool but definitely for the hardcore enthusiast/restaurant. Wish that some more context would have been provided for the plebs among us.
I have no idea what I could use it for if I owned one.
0:10 Kenji is an outie! Don't ask me why I noticed that.
my belly button? No I'm not! must just be a funny bump in the shirt from hanging it funny.
looks like a mic pack or something
5:00 How could it possibly be "preprogrammed"? It has to be some kind of feedback mechanism... unless he's saying it's a pre-programmed feedback mechanism.
Dois Koh It's probably a PID loop controller with limit switches or vibration sensors. Kinda like how your washer's spin cycle knows how not to destroy itself when it has an unbalanced load.
genuinely curious, what are the uses for this thing?
I think he's gonna need a different pitchman if he wants to sell the thing.
There is something weird going on with the sound.
This was just a single camera w/ a shotgun mounted on top. No individual mics so sound quality is a little funky.
Gets better further along
I think they just noticed the audio when you we're shooting with the phone at 2:20. Doubled audio tracks from both cameras.
Ah, I might have forgot to cut out the sound from the phone camera. This was a hacked together edit job.
One year old eggnog? Kenji, I think you must be joking, please reassure me.
Aging egg nog is common. Not sure what reassurance you seek.
1 year old egg nog! www.seriouseats.com/2016/09/is-aging-holiday-eggnog-worth-it.html
J. Kenji López-Alt over Christmas I tried the one year egg nog at the bar I worked at back in 2015. I didn't even realise they had kept some.
It was super funky but definitely not sour. I was very impressed.
I stand corrected!
one year old eggnog?? did i hear that right? sounds like a free ride to a day on the toilet...
Coming off as a solution looking for a problem that doesn't exist.
I think the problem is that most centrifuges are larger and more expensive than what some chefs want to pay or make room for.
I watched the video and honestly have little to no idea exactly what the application of this would be, aside from making butter quickly.
As has been said about every cooking tool throughout history.
+Gavel Pound Google home/kitchen centrifuge, there are already products out there that I would imagine are going to be cheaper than his. He was pretty clear about not wanting to have an affordable price, he reiterated himself many times.
Drbutts Those cheaper bench lab centrifuges use tiny (like 15mL) test tubes, take much longer, and have to be balanced every time.
"And the award for 'Video Most In Need of Editing' goes to... KENJI AND SOME RANDOM DUDE SELLING US A GARBAGE DISPOSAL YOU CAN DRINK FROM FOR SOME REASON!"
Lawrence Godsey yeah the video could use some better editing but if you don't know who Dave Arnold is... well... you should. The dude's a weapon.
