Pistachio crusted lamb rack

- Опубліковано 9 сер 2022
- Recipe
Ingredients
- 1 x 8 point lamb rack
- 100g pistachios, shelled
- 1 bunch parsley
- 3 sprigs rosemary
- 50g bread crumbs
- 3 tbsp olive oil
- 2 tbsp dijon mustard
- Salt to taste
Method
1. At the start you saw me clean some of the muscle fibres from the bones, this is an optional step. Butchers will usually do this anyway.
2. Drizzle with olive oil and season your lamb well with salt. Seal the lamb on all sides on a hot pan and set aside to rest (note you're not looking to cook it at this stage, just getting a good seal on the outside).
3. Next, make your crust by blending all the ingredients (apart from the mustard) in a food processor or blender.
4. Brush on the dijon mustard and then press on your pistachio crust.
5. Roast this in a 200°c oven for about 20-25 minutes, you're looking for an internal temperature of 50-55° C for a medium.
6. Once you reach the temperature, remove it from the oven and let it rest for 10 minutes before you carve.
7. This lamb rack goes perfectly with some sautéed baby potatoes and salsa verde for the side. Enjoy! - Навчання та стиль
I like to imagine that he always just stares off into the abyss while sharpening his knives until he gets an order request
Lmao
He be like: 👁👁 ⚔️
wait... r u saying that he's not doing that 24-7??
That’s what you do when it’s slow lol
That is both amusing and disturbing.
I want to see the chef make his own personal favorite meal
Seconded
Yes pls!

@@DoggyDisk 🤣
Oh Yes .. Good one Tim .. I second that ❤❤
One of my favorite meals of all time is the Tourtière du Lac-Saint-Jean, would love to see your version of it
Im just so amazed how he got the proportions perfect for that pistachio paste, like it was the perfect consistency, not too thick not to loose. Amazing content chef🔥 much love🔥
i don't think i've ever seen a lamb chop as perfectly cooked as this, looks delicious!
That crust turned brown. He should’ve added the greens after cooking, which would have made for a much punchier and brighter green color. C- for effort.
@@buffalo.blackk like to see you do better
@@buffalo.blackk Or top it off with more of the greens after cooking.
@@NateFreestyle No. That’s stupid. The browned greens + pistachio mixture is still there. He should’ve cooked the meat first. Then coated it w/ mustard and then the green pistachio topping for just a couple minutes to set on the meat. This would keep the lamb bright green and much more aesthetic. Don’t burn the greens then cover them w/ more greens. That’s dumb.
@@buffalo.blackk what’s dumb is we again haven’t seen you do better. 😅
