Coconut Shrimp Curry in 30 Minutes- Prawns |Christine Cushing

- I show you how to get maximum flavour from this 30 minute coconut shrimp curry with my secret ingredient. This was a video request from a viewer wanting some great ideas for limes. The final dish is a perfect weeknight dinner with the perfect spice blend.
Express Coconut Shrimp Curry
NOTE: I made ½ this recipe in the video
1 lb large shrimp , peeled and deveined ( about 20 pieces )
2 Tbsp. oil or butter (25 ml)
4 shallots , chopped
2 cloves garlic, chopped
1-2 Thai chiles or ½ Scotch Bonnet pepper
2 tsp. freshly chopped ginger (10 ml)
3/4 tsp. turmeric (4 ml)
1/2 tsp. allspice powder ( 2.5 ml)
1 tsp. coriander seeds, crushed (5 ml)
¾ tsp. cumin seeds, crushed (3 ml)
Grated zest and juice of 1 lime
salt and pepper to taste
1 ripe banana , chopped
1 ¼ cups full fat coconut milk (300 ml)
1 ½ cups shrimp broth (375 ml) - or vegetable broth or clam juice
¼ cup dry sherry (50ml) or white rum
Fresh coriander leaves for garnish
Serve over rice
Combine all the spices in a small bowl , including turmeric and toss to blend well.
Heat 1 Tbsp. oil on medium high in large skillet. In a bowl, toss shrimp in half the lime zest and half the ginger and 1 tsp. of the spice blend. Season with salt and sear quickly just until shrimp turn pink and is shaped like a C, 1 minute per side. Remove from heat immediately and reserve.
Return same pan to medium heat and add rest of the oil , add the shallots and sweat for 3-4 minutes to soften. Add the garlic, spices, chilis, remaining ginger and lime zest and saute for several minutes more. Deglaze with sherry and add bananas and stir. Add stock, coconut milk, shrimp stock and lime juice and season with salt. Bring to boil over medium heat .
Cover and reduce to a simmer for about 20-25 until sauce is thickened and flavour has developed, stirring occasionally. Just before serving , return the shrimp to the sauce and remove from heat. Cover for about 2 minutes until just heated through. Do not cook shrimp too long .
Serve over rice with lime wedges and coriander

You don't really taste the banana , its more of a back note of sweetness and adds texture to the sauce. I hope you try it.

Do you have a favorite "cheat recipe"?
Mine is chicken cacciatatore; brown chicken, place in baking dish, bake until almost done, add a can of sliced mushrooms and a jar of salsa and cook for another 10 mins and done.
going try this 4 weeks Go my friends ever other Saturday and they are vegetarian but eat fish. BUT I will have to take the tails off as his wife can't touch them LoL
I have used lime some in a replacement of lemon just for a slightly different flavour.
