    In this video, I demonstrate how to make coconut buns using an easy and delicious recipe featuring desiccated coconut. These coconut buns are a firm favourite, served with a topping of raspberry jam and an extra sprinkle of desiccated coconut for added flavour.     Coconut Buns
    TIMINGS:
    • Prep Time: 15 mins.
    • Cook Time: 20 mins
    • Total Time: 35 mins.
    SERVINGS: Makes 8.
    INGREDIENTS:
    • 1 ¼ cup (225g/8 oz) Plain/All Purpose Flour
    • Pinch of Salt
    • 1 tsp Baking Powder
    • ¼ cup (75g/2 ½ oz) Butter, frozen and grated.
    • ¼ cup (75g/2 ½ oz) Sugar
    • ½ cup (50g/1 ½ oz) Desiccated Coconut
    • 1 Medium Egg
    • ½ cup (150ml/5.07 floz) Milk
    • 8 tsp Raspberry Jam
    • Desiccated Coconut
    Oven Temperatures.
    Preheat the oven:
    • Fan Oven: 180°C/360°F
    • Oven: 200°C/400°F
    • Gas Mark 6
    METHOD:
    1. Preheat the oven to the above temperatures.
    2. Line a large baking tray with parchment paper.
    3. Sieve the flour, salt and baking powder into a bowl.
    4. Gently rub in the butter with your fingertips until the mix looks similar to breadcrumbs.
    5. Add the sugar and coconut and mix well.
    6. Add the beaten egg and mix it in.
    7. Pour in the milk a little at a time until the mixture reaches a stiff consistency.
    8. Spoon a dessert spoon full of the mixture onto the baking tray.
    9. Bake for 15-20 minutes until the buns have risen and are golden brown.
    10. Remove from the oven and allow to cool on a wire rack.
    11. Decorate the tops with jam and sprinkle on the coconut flakes.
    12. Mmm, Scrummy!!!

    Oh these look so good Katrina, haven't heard of coconut buns. But I do love coconut 😊 Need make some soon!! No sharing with hubby though , he's not a fan of coconut. Thanks for sharing your memories ❤️

      The coconut is quite mild in them Kathy so you never know he might like them. This was one of my first bakes in Home Economics class x

      Oh wow that is so interesting....my first bake in Home Economics was Lemon Meringue pie/tart using egg yolks, (wasn't a fan). Prefer the version using condensed milk with yolks. It took me some time to develop a taste for lemon curd - love it now drizzled on a fresh cream 'mammy sponge " 😊

      That was a hard first bake Kathy. I made key lime pie with condensed milk and it's fab never thought to use condenseed milk for lemon meringue. I do like lemon curd but hard to get a nice one in the shops homemade is delicious, lemon curd was my dad's favourite, fresh soda bread with butter and lemon curd , yum x

    Those are so cute and seem easy and quick to make. They remind me of a cake treat when I was a child called Rasberry Zingers, haha. Ps- I am making your treacle bread today but with molasses. I even got Kerry Gold butter to spread on it!

      Oh wow you can't beat Kerrygold is it expensive over with you? It is expensive here but it's quality x We have a local butter to Connaught Gold and it's good as well x

      @@ScrummyTV it is a little pricey here. I don't use ot all the time. Aldi used to stock it and Dubliner cherse(my favorite) but they no longer do. They priced it a little less than other shops.

      I love the Dubliner cheese too and it's so expensive here so only buy it now and again.
