Buenisimo! Recta #1 -- I substituted ground walnuts (ground in my spice grinder ) for tuna, roasted 4 garlic cloves along with the eggplant and 'maters. I also used panko crumbs, instead of fine bread crumbs. My eggplant skin was like a pizza crust, so I picked the halves up and ate them with my fingers. Buenisimo!
Looks delicious . Whenever I cook egg plant I put it in the oven sliced into cubes add a glug of oil and sugar as I find the sugar helps it to soften . I cant get my egg plant to soften any other way do you have any tips please?
