Coconut layer
Ingredients:

Egg whites 110 gr
Sugar1 170 g
Coconut puree 220 g
Water 100 g
Sugar2 300 g
Agar (900) 13 g

Strawberry layer
Ingredients:

Egg whites 110 g
Sugar1 170 g
Raspberry puree 260 g
Water 100 g
Sugar2 300 g
Agar (900) 13 g

Make a stable meringue from the egg whites and sugar1. I only use pasteurized egg white in these desserts, for reasons of safety.

Combine all remaining ingredients in a saucepan, and, stirring constantly, bring to 103-104C.
⠀
Without stopping to whisk the meringue, gently introduce the syrup along the wall and whisk until stable.
⠀
Drop the marshmallows into the heart mould and stabilise it for 1-2 hours.
Chocolate coating
Milk chocolate 200 gr
Vegetable oil 20 gr
Melt chocolate and add vegetable oil. Mix well and coat the marshmallows.
