I think when the captain 🧑✈️ refers to Supersonic Speeds he is referring to Ground Speed which is quite different from the actual Airspeed. Plus this (Groundspeed) is a function of Tailwinds, Head winds and their directionality. It is inconceivable that airspeeds can ever exceed supersonic speeds because commercial aircraft can never exceed and are not meant to exceed supersonic airspeeds. This is the most plausible explanation coming in from an aviation enthusiast.

Out of curiosity would like to know what happens if there is any emergency while flying over ocean where there are no major airports to make emergency landing..how to decide where to land and if nearest airport is far away whats the procedure..

185000 litres of fuel .. A range of 15500 km approx A350 1000 carry 160k litre of fuel and it's range is around 16500 km .. A350 better than the 777 200lr
