I use foamy for mine Thank you for your vid it's very well done. I took a few classes 20 yrs ago at the local city center but, I moved and I didn't finish my work, the material I used was softer and came in a roll. I'm going to try your way and make a sign for another project :) I still have all of my tools.
Lovely video, very well explained. I use aluminium pie plates/baking tins to emboss onto! I did try cans, but they were too hard for me to manipulate. You can buy rolls of the proper stuff, but very expensive! :)

You can buy rolls of the 'proper stuff' online as you say, but I found that (for me at least) the surface of the cans was smoothest and so least likely to go all the way through, no matter how hard I accidentally pushed. What did you use to cut open the can and how did you avoid cutting yourself?
A good pair of kitchen scissors is all you need to cut open a soft drink can. But yes, do take care with sharp edges.
