I’ve been breaking down my slow mo recently, noticed that my knee isn’t hyper extended at ball release as seen in slow mo vids of guys like Justin Verlander. Is it an anatomical thing, a mobility thing, or a mechanical thing?
Not always, the lead leg block can be seen as a byproduct of a complete pelvic rotation, and the degree of knee hyperextension is completely dependent on physiology. Mechanics, joint ROM, and physiological structure all are variables influencing not only the lead leg block, but pelvic rotational capacity as a whole.

As right-handed pitcher, sometimes when I dong toss or throwing bullpen I pain in my left sacrum from blocking my energy.... So this normal??
