Very nice, Bumbi! And as usual a clip full of tips and alternatives, very clever. When I lived in a house I always used to grill eggplants on the BBQ, now in an apartment a bit more more tricky. But I do them in the electric oven with a few flakes of wood for smoking, it works, gives a good taste.

I have made Turkish, Lebanese etc dishes with charred eggplants many times, and Tunisian, Moroccan, Mexican dishes with charred Bell peppers, tomatoes etc. I have a gas hob and electric oven. I couldn't be without my gas hob. But I do not like gas ovens. I prefer electric fan assisted ovens. Excellent recipe as always. Hope you have a lovely weekend ❤

I have read that "Male eggplants have fewer seeds and are less likely to be bitter. To differentiate between male and female eggplants, inspect the flower end. The male has a small, round, smooth end; the female has an irregular, less smooth end." What is your experience?
Hey Bumbi, this recipe is my kids’ favourite, so I do make it when big brinjal is in season. I take it the same way , but I add green chillies also along with garlic in the slits, that way the chilli too gets the smoky flavour. I've been making a version of this (Dharamjit Singh's recipe) for years. Never thought to add garlic before roasting - it adds an extra layer of flavour. Your spice mix works better, too, and I'll use it from now on. (By the way: with some recipes, I add a small splash of Worcestershire sauce, rather than salt, to the onions to help them soften - this is one of them.)

Question Bumbi, using cast iron pan to char skin, but eggplant didn’t appear to be soft enough, but it started to burn. If I put the undercooked eggplant back on pan it dried all the remaining juices. Any recommendations on how to cook. Should I cube the eggplant and then cook?
Probably cut into half vertically and char it. The outer skin will get burnt, no worries about that. How about trying it in the oven under the broiler on a broiler pan?

@@CurriesWithBumbi I use same iron mesh, which we used for chapati. It’s mess after the roasting eggplant but clean it. I wish I can send you pictures while roasting eggplant.

You can put it under the broiler of your oven or you can roast it in a very hot oven . Roasting the eggplant is the beauty of this recipe.

If you broil it in the oven, do you still need to coat it with oil? Am afraid that'll smoke up the oven and then the smoke alarm will go off.
No you don’t have to apply oil if putting under broiler
Do you think ghee smoked with a hot charcoal (dhungar), as in Makhani, would work for the smokiness in this?
It can if you are not roasting it in an open flame like on a gas stove

I do same way, we have electric stove
But doesn’t the coils get dirty and I feel it’s bit dangerous to do in this way on an electric hob.
