How to make a Sticky Toffee Cake | Jane’s Patisserie

  • Sticky toffee cake?! YES PLEASE! 🤤😏
    A gloriously delicious two-layer sticky toffee cake with a homemade toffee sauce, toffee buttercream frosting and more… heaven on a plate! 😍
    For the sponge
    ■ 250g dates
    ■ 1.5tsp bicarbonate of soda
    ■ 180ml boiling water
    ■ 125g unsalted butter
    ■ 225g dark brown sugar
    ■ 4 medium eggs
    ■ 250g self raising flour
    ■ 125g black treacle
    ■ 1.5tsp vanilla extract
    For the sauce
    ■ 150ml double cream
    ■ 1 tbsp black treacle
    ■ 75g dark brown sugar
    ■ 50g unsalted butter
    For the buttercream
    ■ 200g unsalted butter
    ■ 400g icing sugar
    ■ 85g sticky toffee sauce (above)
    Decoration
    ■ Sprinkles
    ■ Fudge pieces
    ■ Sticky toffee sauce (above)

    ❤ Love sticky date puddings.
    I used to make this cakes a lots in lifestyle homecare villages. Those Scottish and English elderly love love love this pudding, served with butterscotch cream and ice-cream.

    I just made this now for Father’s Day, parents coming for lunch and I haven’t tasted the cake yet but have tasted the buttercream and toffee sauce and omg 😍 The sauce is divine! It’s genuinely from the gods. Can’t wait for a slice of the whole thing

    Looks gorgeous. And thanks for linking to equipment. I’ve dabbled with baking but now I want to have it as a proper hobby and want to invest in decent equipment so it’s soooo helpful to see things like which pans you recommend. Saves buying cheaper stuff that might not give as good results.

    Cheers for the vid when i use treacle or golden syrup i heat it wit the tin in a pot of simmering water it make the syrups thinner and easier to pour or use a spoon keep up yer guid work thanks.

    Black treacle substitute? Molasses? Dark corn syrup? (In the US, some people call corn syrup Karo syrup. Karo is just the name of the manufacturer.)

    Hi Jane, which baking spread do you prefer. I have tried a couple but they seem to make the cake mix more runny than normal. Thanks x

    Is margarine the same as baking spread for making your cake batter as I usually use butter, what difference will it make please?

      I'd say they can be different, as some margarines are only oil based but the baking spread I use still contains buttermilk but for cake batter I use a baking spread x

    For your sticky toffee cake, do you add all the liquid that you added to the dates to soften them? Valerie.

      Yes! All the liquid used to soften the dates then goes into the blender x

    How do you get your cakes to be flat?? Mine seem to ‘dome’ slightly x

      These naturally bake this flat to be honest, but if you struggle generally you can lower the baking temperature (for example 160c fan, make it 140c fan) and bake for much longer instead x

    Please stop using plastic piping bags jane. Instead use a reuse able bag that you wash after every use. Much better for environment x

      I use them to prevent cross contamination - reusable ones cause an issue with this.
