I'm a retired baker with 45 years experience. I always used 'lidded' trays when baking English Muffins. Basically the lid was the same rectangular shape as the base tray but just a little bigger so it fits over the base tray. Lids were put on before proving. Lidding the trays meant the top and bottom face of the muffins baked and coloured at the same time. No flipping needed.

When I was overseas in the Navy I remember getting bread like that it was so fresh that the crust was crusty in the center was warm and toasty and delicious

If you've ever attempted to make bread for the first time, you realize just how much of an art-form it really is. Getting the stages just right is a bit daunting. It is a specialty...the word 'baker' denotes this. Personally, I've made bread many times and I've had many failures. I'm just now getting to the place where I realize the success of all the experience. Having a really good baker and bakery in your village is a wonderful thing. I applaud the efforts of these folks.

We used to do something like this at our bakery. People really LOVE knowing that the bread is hot out of the oven. They didn’t even mind waiting if there was coffee! Good luck!
I love baking bread. Since I cook for just myself, I developed a one-serving loaf. That way I can eat fresh, hot bread every day without gaining weight. Your breads look lovely.
People are so lucky to have this bakery in their town. I have to drive 30 minutes to get to good bakery like this. Good luck to this bakery in the future.

Hello from Denmark, im a baker here and it's fun to see how your take on danish pastry is, we usually fill a little marcipan filling inside the square and fold the corners in, then when proof'ed we give them egg wash and press the middle with 4 fingers and then fill them with either jam or cream, called a spandauer. :) love your channel :)

When I go to Turkey one of the things I love is getting fresh hot bread from the bakeries. You can watch as they pull it out of the oven bag and hand it to you. Also no chemicals in anything
i have been a follower since very very long time...finally i am able to fly to Phoenix on Dec 6th for a client meeting and i will for sure make it to your bakery...love to try some of the bread and pastries as well...

Your PROOF sign and the new bakery look FANTASTIC and I can't believe you're making that extra leap to have hot baked goods ready for customers as soon as you open.....and on the FIRST DAY?!! I can see John writing a book like Tartine has, in a year or so. Truly amazing progress in such a short time. I can't see you not becoming one of the best Artisan bakeries in the U.S. in the next few years.
About those burns, grit your teeth and stick your arm in the oven. It will hurt like heck for a couple of minutes but it will take the sting out. It works. I started baking over 50 years ago and I've done this many times.
