Hi Steph, this reminds me of a dish my mother made that we called "tomatoes and bread" . She baked her own bread and canned her own tomatoes. She would take thick buttered slices of day old bread and break them up or cut them in chunks. Place them in a buttered casserole dish, then open a jar canned tomatoes and pour over it, then salt and pepper to taste. Sometimes, she would add onion, green pepper, and garlic if we had it. She would also use store bought stewed tomatoes. I think she baked it about an hour at 350. Your version looks very good too. Thanks for sharing.
You always amaze me with your thrifty meal ideas!! Since I am not a huge fan of pepperoni, I would use some ground beef or Italian sausage. Thanks so much for this easy, economical meal.

I did comment below, but I have to share something I do t is so good and filling....I buy 5 pound bags of regular potatoes once a month ( so much cheaper than packets) and I bake them wrapped in foil. and freeze them till i am ready to use, Ii unwrap and cut into smaller squares, and top with my favorite topping,...this is such a time saver.. I also use for stews and creamed or just buttered,, hash browns(county style) straight out of the freezer this way and thaw l heat them up...I can have loaded bake potato.. I used butter, and sour cream and cheese, but you can top with anything you like, many choices, like mushrooms, peppers, broccoli, and bacon bits or pre cooked hamburger, chicken or even tuna. you can add a gravy on top if you would like. makes a one dish meal...when I shop once a month I prep everything in advance for my meals and freeze, so my burger is cooked, my peppers and onions and mushrooms are done also, among other items and put into one meal freezer containers, ready when I am....♥ Enjoy and may you always be blessed♥
Looks so good . I wanted to grab a couple of croutons to munch they sound so crunchy. I'm in toal lockdown here in South Africa, 2nd day of 21. My grandmother used to make something like this,, but she would fry the croutons in butter, and add some cooked macaronis but no meat. She's to cook like this all the time I remember homemade bread and milk gravy and that was supper, it wasn't fancy but we didn't go hungry.

@@lemoncrinckles yes ma'am, when I was a young kid every Friday my grandmother would go through the refrigerator and pull out all the leftovers. All of those leftovers would get ground up and put into a Saturday soup. Sometimes I would look at it and shake my head but on Saturday when I was eating it I was licking my lips. Looking back at it now I was thankful to have a full belly and a grandmother who knew how to work miracles with all those leftovers 😀👍
