The Best Goto and Pares Recipes with Beef Tendon

- A hot bowl of goto and pares are perfect for any time of the day. Erwan makes his with lots of tendons for that extra collagen.

Recipe
Goto:
400g tendons (cleaned)
1 carrot
1celery stick
1 brown onions
pinch of salt
water to cover
200g seared shortribs
Arroz Caldo:
1 cup glutinous white rice
1 brown onion
2 tbps minced ginger
1 tbsp minced garlic
1 tsp of fish sauce and more to season
water as needed.
Top with: crunchy garlic, spring onions, calamansi
Annatto oil:
2 tbsp annatto seeds
1/3 cup of oil
Pares:
500g tendons
300g short ribs
2 tbsp garlic
1 brown onion
8 ginger slices
1/2 tsp white pepper
1/3 cup cooking wine (sake)
1 tbsp fish sauce
2 tbsp oyster sauce
1/3 cup soy sauce
2 tbsp brown sugar
5 pcs star anise
Top with: crunchy garlic, spring onions.
Water as needed, to cover meat in the beginning and more as the sauce reduces during the cook
for both recipes, I recommend to braise the tendons for 4 hours, or 2 hours in a pressure cooker.

I agree. I'm from France and have tried to cook some of your most famous Filipino recipes and they're really delicious. Would really like to give got and pares a try too.
True, before I could only cook fried egg, rice and steamed vegetables. When I met my bf and eventually lived together, I wanted to introduce our culture to him. I would watch loads of videos mostly from this channel and try to learn different Filipino recipes. 8 years later and he gained 15kg and blames Filipino food because of it. 😂

It's been 5 years, I don't use water for cooking, I make my own stock from different bones/cartilage, left-over etc. My favourite is turkey neck/bones stock (bought it from Asian stores). I cook my rice with bone broth - you will never eat rice that was cooked in water lol. Then the "collagen" craze in different form started.
I tried so many ways to make my stock. I like mine plain, i pressure cook it with garlic, onion and a lot of black pepper. Cool it and freeze.
That short rib looks good! Guess I need to try this recipe since I usually use bulalo cut and tendon when making pares :D

ganyan ang pares sa kalye ngayon kasi mahal na ang karne ng baka noon pa man, pero kailangang maging mura kasi pangmasa in expense of good pares flavor. May ibang OG resto na may pares na kasing tulad nito kaso by price wise, almost parehas siya sa price ng bulalo.

Yung bone broth video mo ginawa ko na. Chicken feet ginamit ko. Sarap sa sopas, miswa at tinola. Level up ang lasa.
Here in japan they called it Gyusuji nikomi (Braised beef tendon)or Buta no kakuni(Braised pork) almost same taste as Pares 🥰 😋

Try adding a tbsp of bagoong alamang while sauteing and it levels up your goto. Superb!

Why didn't you tell me about the little black hairs on the Tendons? You had me in the Asian grocery looking crazy. Asking, "What are these black hairs." The manager had to break it down to me. I brought 4 packs of tendons. Will try next weekend. Your receipt looks delicious and I read about how healthy they are. I ordered a Beef Tendon dish from Doordash and it was delicious. Like oxtails without the meat. I think I'm going to prefer the short ribs as you did.
