  • How to Make Italian Mushroom Risotto (so CREAMY)
    RECIPE:
    300 g rice (arborio, carnaroli or vialone nano) - 1 cup + 1/2 cup
    400 g mushrooms - 14.10 oz
    1.5 l water (6 cups + 1/4 cup)
    1 small onion
    40 g butter (3 tbsps)
    30 g parmesan cheese (3 tbsps)
    80 ml white wine or broth (1/3 cup)
    salt
    parsley
    * For a VEGAN option, omit the parmesan cheese and use 30 g of olive oil instead of the butter.

      In a medium pan pour 400/500 ml of cold water cut 1 big onion small piece, some celery, 2 carrots, two tbl of sea salt, cover and let it boil. When ready in about 20-25 minutes switch it off.
      Meanwhile, in a large no stick pan, cut an onions in small cube, and the mushrooms sliced, fried gently for 10 minutes approx. When cooked pour in a bowl and leave aside, scoop some of them and blend it.
      Cut the mushroom ( might need peel it if they got dark skin).
      Toast the rice 1 cup per person 100gr for 5 minutes in a low gas
      Then pour 30ml dry/medium white wine ( good brand) and mix well medium high gas for few minutes.
      Pour the vegetable both a scoop bit at the time.. see Giulia how she does.
      Keep staring gently and frequently or you will burn .
      Remember cook in simmer gas.
      5 minutes before.. add bits of butter and fresh parmigiano.
      Keep steering and when ready spinkle some fresh parsley.
      Buon appetito..!!!

    I made this Risotto today and it was totally delicious 😋 I forgot to add the fresh parsley tho, so I think it will be even more delicious with the parsley. This recipe makes a lot of Risotto, I am going to freeze the rest. I have made a few of Guilia recipes (her lasagna recipe is awesome and freezes well) and I never have to add anything extra or adjust the flavour as I do with other recipes.
