this is a failed attempt.... if you do it RIGHT, he will tell you that he did a fine scetch and it will help him to chisel a great looking statue! do NOT let the griffon fly away, you have to kill him or petrify him. i used a mage pawn with fire affinity buff and set the griffon on fire twice. when he is laying on the ground, dont use the heavy attack to stab his head, just wait it out. once you set him on fire twice, enough time should have passed for the quest, proced to kill him.
you can tell your pawns to WAIT via command, so they dont attack any more once you are fire buffed

Waited for rain and kept the Griffon frozen for 5ish minutes and he still didn't managed to draw a fine sketch. My guess is that only petrifying the Griffon with a well preserved Medusa head triggers the better ending.
