I can only get about 2 seconds which iant enough. How do i get more time?

hold E longeer early on, it's always red at the first 2 seconds.

Tty getting closer before you initiate the pickpicketing. The your colour starts further away from red (it seems it is saver to pickpocket from closeby then far away from someone)
Also, make sure you sneak up on them. The less chance they didnt here or see you, the more seconds you might be able to get before the counter turns red
