if you want to scale the business, it's important to measure each ingredient per batch for proper costing and consistency of taste and quality. even the cooking process needs to be timed.
This is noted. We measure the portioning of ubod in each wrapper but not with the spices po. We are still developing the flavor but we have a benchmark or an estimate based from our previous cooking experience. Thank you for the feedback po. Noted po yan once we find the best version/recipe. @@ekcitedmango1072 try nyo po gawin per 1000grams ang recipe.. like me po..nagtitinda po ako ng lumpiang shanghai.. per 1000grams (1kg ) po nakagrams din ang sukat ng salt ,pepper at kung ano ano pa,lahat per gram.. example po sa 1000grams ( 1kg ) na giniling , 15grams po ng salt , if ever po sobra ng 1000grams (1kg ) let's say 1.200grams ,then multiply lang po.. 1200 x .015 = 18grams ng salt.. mas maganda at accurate po pag per grams keso kilo .. sana po makahelp.
UPDATE: We already have a standard measurement of ingredients for our ubod. What varies is the sauce options, depende sa request ng customer. Still in progress: Chicken, Pork, and Beef variants (To be finalized)

Yung akin po pagkagayat na pagkagayat, saka ko po kinukuha. Inalam ko po talaga anong oras sila nagbababad. Yung sa sodium, totoo po na pag puti babad na sa sodium, pero may strong acidic smell po. Yung akin po pagka gayat po ng ubod, bibilhin ko po and then rinse, so wala po siyang strong smell. Babad ko po agad sa water and then rinse the ubod 3x po. Thanks for sharing. Meron din pong ibang ubod na kahit binabad sa sodium, nag oorange parin po ang kulay, yan po yung sa dati kong kinukuha. Yung sa supplier ko po ngayon, di po nakababad sa water, nasa isang palanggana lang siya and dry, without water or sodium po. Wala naman po problem pag binabad sa sodium since standard process po siya for preservation, dagdag step lang po yung pag rinse ng sodium kase medyo matapang talaga ang smell niya. Hello po! Explain ko na lang din since pangalawang comment na po ito, clarify ko lang sana. We are still developing the recipe for our sauce variants since we are servicing different clients from different provinces. But the portioning of ubod per lumpia is measured po as shown in this vlog. If you watch towards the end, you will see that we have a measuring cup for the ubod portioning.. As for the sauce ingredients' measurement, we have a basis for it's flavor, but since we have different clients requesting for different sauces, we also adjust to their requests depending on their preference for the dominant taste in it. For our standard sauce, we make sure we have a batch to compare its consistency with every batch that we cook. We have a standard measurement for the regular sauce naman. That measurement, I am not willing to share to the public as this is still a business, hence, it is still part of our trade secret. Pasensya na at di masyado nalinaw sa video that I didn't want to specify my measurement for the regular version of the sauce of ingredients as it gives away the trade secret of our recipe. We can't disclose everything in this vlog. Also, my responses were just spontaneous. We are looking into offering 2-3 sauce variants and once it's established, we will launch it but still, we won't reveal the measurement in this vlog po. I hope you understand.
