Part of me thinks it would be cool if Nintendo made true retro tracks. Recreate the style and look of the tracks from the N64 or SNES. Like imagine HD characters driving on SNES graphics. That would look sick.
They kinda did that with some SNES and GBA tracks before 8. Mario Kart Wii has GBA Shy Guy Beach. That track has 2D animated water that is completely shallow, and the ship shoring cannons in the background is a 2d image. Also, the DS remakes of SNES tracks are VERY faithful to the originals. If you're talking about fully making the tracks look EXACTLY the same as the originals, graphics and everything. I don't think that's as cool as you make it out to be. Here's why. The SNES and GBA Mario Karts use Mode 7 to imitate 3D visuals. They're not ACTUALLY 3D. So if we were playing a 3D Mario Kart with 3D models, and we went to tracks that have completely fake 3D, it would be very disorienting and frustrating to play due to a lack of depth perception. Plus, SNES and GBA tracks are completely flat and are not as fun to play as modern Mario Kart tracks, so they'd come off as boring without any significant changes made to them, like ELEVATION! Then there's N64 and DS. While they would at least be playable unlike SNES and GBA, their blocky textures would come off as uncanny valley when you place HD characters. It would look really off. GCN, Wii, and 3DS wouldn't be as big of a problem, but they would still look a little off with standard definition graphics when you're playing as HD characters. Overall, the retro tracks would look REALLY out of place Besides, I like what Mario Kart is doing with its retro tracks, by taking the original tracks, giving them a new overhaul, and overall creating a new experience with them that you couldn't get in its original iteration, as well as making them more in line with the modern tracks. Some of these tracks could even be mistaken for new tracks like Ribbon Road and Cheese Land! That's how amazing they are! If I wanna play the original iterations of the tracks, I can just go back and play the Mario Karts that they're from.
