    I went to the mart. There were no people ... but met a lot of strawberries...
    They are sweet strawberries that have grown with no pesticides.
    So they were cute, small and natural sized.
    These days, the fruits are all terribly large. Even normal strawberries are too big.
    What are they feeding strawberries? many chemicals? I thought it is horrible.
    So I prefer only small strawberries.
    They have perfect tastes for strawberry cake. So I brought them all.
    I really like Fraisier Cake. So, in my fourth video, there is a Fraisier Cake filled with the cream diplomat.
    The cake and the decoration I made at that time are almost the same as this cake. But the cream recipe is completely different.
    The process of making Genoise was skipped because the film seems to be too long,

    I made puree with these fresh strawberries. Made a strawberry cream with the puree and put it in the middle of the cake.
    Filled the rest with fresh cream with mascarpone cheese and condensed milk.
    And I mixed the strawberry powder with deco-white and dusted it.
    Strawberry dusting and its taste go well with this dessert.
    I tried to make this cake not too sweet.
    Kirsch or lemon juice is the key to this cake.
    It's a very delicious cake with a soft texture and a strawberry aroma. Please try by all means ^^
    Usually, you use a stainless steel mousse ring for this type of cake.
    I used the acrylic mousse ring in the video.
    This is a transparent acrylic pipe. Whenever you stick the fruit to the sides or fill the cream, you can check if it is going well.
    I ordered this mousse ring 160mm in diameter, 3mm thick and 100mm high from the Internet Acrylic Shopping Mall.
    Even though It's more expensive than a normal stainless mousse ring, I'm very satisfied with and will keep using it.

    Another mousse ring, trimmed the Genoise sheet, is 16 cm in diameter.
    Ingredients
    ★ sponge sheet (18cm round pan)
    95g egg whites ( from 3 eggs)
    90g sugar
    1 egg yolk
    90g cake flour
    30g vegetable oil
    30g milk
    3g vanilla Extract
    ★ sugar syrup (boiled with water and sugar, put kirsch)
    60g water
    15g sugar
    6g Kirsch(cherry liquor)
    ★ Strawberry Puree
    110g strawberry
    33g sugar
    10g lemon juice
    ★ Strawberry Cream
    25g egg White
    25g sugar
    30g strawberry puree
    3g powdered gelatin + 15g cold water (Or Use 3g of leaf gelatine after soaking in 15g of cold water for 10 minutes)
    90g mascarpone cheese
    90g heavy cream
    ★ white cream
    100g mascarpone Cheese
    80g condensed milk
    10g lemon juice
    5g vanilla extract
    5g Kirsch (cherry liquor)
    5g powdered gelatin + 25g cold water (Or Use 5g of leaf gelatine after soaking in 25g of cold water for 10 minutes)
    150g heavy cream
    15g sugar

    I made this cake last week. I bake but I am NOT anything approaching a Pro. But what I am is a HUGE fan of this lovely woman. Her recipes are lovely. A few tips. 1. Assume it takes 2 days to make this cake so that it sets and it’s very “chilled” from extended time in the fridge. Especially if you serve this in a warm climate. Then serve it on day #3. 2. Make the strawberry cream mold on day 1. Measure all of your ingredients for the cake on day one but don’t bake until the next day (day 2), and make your simple syrup on day one. 3. Make your cake early on day 2. Make your white cream late on day 2 (this gives your strawberry cream plenty of time in the fridge. Note: Don’t skip the simply syrup because this keeps your cake freshest when it’s spending time “setting”. 4. I weighed the white cream and then divided in 3 portions to ensure I had sufficient amounts below the strawberry cream, above the cream, and then on top of the final layer of cake. I guessed at this but assumed the top layer was a much lighter frosting. I know this sounds fussy, but it helps you to balance volumes above and below the strawberry cream- it does matter. The outcome? My son- who has spent the last 2 “covid lock down years taste testing Joconde’s desserts. This is his favourite. Light, intensely Strawberryish, and visually and texturally stunning. I didn’t do the dusting or the food colouring because I couldn’t find any. But this is a delicate and beautiful homage to early summer berries. Such a fan of your work. I don’t know how you come up with your creations. But they are wonderful. (Orange Caramel Carrot Cake is so lovely). ❤️🇨🇦

    So in Korea, are strawberries packaged specifically so all the strawberries are of similar shape and size? We don't do that in the US, so finding strawberries like that is hard.

      So i haven't really eaten the exact same cake in the Video but i've eaten a similar one so i hope at least that can help you. Uhm so it tastes very sweet and strawberry like. Also the strawberries inside the cake add a little bit of sourness to it. I cant explain it myself but i hope this helps. Good luck with your book!

      I've made this cake 2x now, it tasted very sour or very sweet depending on how you process the strawberries. If you used cheap & sour strawberries, it will taste very sour when you bite in the strawberries. I took an extra steep to sweeten and glazen the whole strawberries on my 2x try with sugar before i put them in to lighten the sourness abit.
      Texture wise, chewy (tiny bit like jelly when its cool) and ice cream-like. I like the texture a lot, but it needs to be freeze to achieve a good texture. Leaving it in temperature room will make the cream too soft and not that good of a texture to bit. The best part of the cake is the small bit of strawberry puree in the middle, if you use good strawberry / sweeten it a bit, that is.

    i made this cake yesterday. And it takes amazing. Not too hard to make as well. I can say with confidece that Joconde's cakes are taste-guaranteed after having tried making cakes with several recipes. In fact, I had made a similar one from another You Tuber's. It came out good too if you say only the shape and design. But it tasted too sweet and too sour with too much cream cheese and yogurt. But this cake, as usual with Ms. Joconde's recipes, has soft, well balanced, and very elegant taste. I am sorry because the other Youu Tuber has a lot more Subscribers who actually watch the video only for entertainment but never try to make a cake by themselves.

    I tried making it yesterday, but I fear some steps went wrong. The strawberry cream was a lot runnier when I finished it than yours was. I think that was my fault but I'm not sure how that went wrong.
    What I definitely did wrong myself is overmix the sponge batter causing it not to be as fluffy, as well as swapping gelatin for agar agar. The last didn't make my creams set as much as I hoped.
    Overall, even though not as good as how you did it, I love this cake. It's delicious either way

      You can make Mascarpone cheese yourself. A lot of recepies over the internet. it is very easy to do it.

    딸기크림만들때요 마스카포네치즈에 딸기퓨레 섞으니까 분리가되던데 왜그럴까요ㅠㅠ 두번이나 분리되서 포기해쏘요ㅠㅠㅠㅠ 흑흑
