    A an ounce or more of liquid smoke before laying the fish down and you'll end up with the equivalent of smoked salmon without the hassle of smoking the fish. Adding crushed allspice berries enhances the flavor. Use chopped fresh dill weed instead of pickling spice and you have gravlox. Add crushed juniper berries to the dill & you have Norwegian style gravlox. The point is that this technique is quite flexible. What I would NOT do, which I have seen suggested online, is to use lemon in this preparation as the acid effectively "cooks" the protein in the fish. If you want to add lemon, it should be sprinkled on at the time it is served.

    I would like to suggest the addition of about 1/2 to 3/4 of an ounce of the best vodka you have on hand as well as a nice bunch of fresh dill and do everything the same .. it puts a spin on the flavour that is to die for I sometimes zest a lime or lemon and add that as well .. great stuff .. that looks yummy

      @@FatFingerFoods - I do 4 parts brown sugar and 1 part salt. It smokes up sweet and lightly salted. I’m going to try it right out of the brine and see how it tastes! Maybe with cream cheese and pickled red onion.

      YES!!!! We used to make Gravlox with dill all the time out of the tail end of a whole salmon filet. Where in the west are you from?

    🌴 hey Jen , I wonder how it would come out if you took the skin off before adding all the ,salt ,b sugar , and spices and put it in your vacuum bag set up , I’ve seen this on cooking shows it helps infuse the flavors quicker , ( yea I’m thinking maybe add a little liquid smoke ) break out the bagels 🥯 and cream cheese !

    • @FatFingerFoods
      @FatFingerFoods  2 роки тому

      Yea maybe. I think the firmed up fish helps the skin come off later easily and cleanly but you really could do it either way!

    Can you do a short clip of the food that I think your mother made for the boys? It had tuna, avocados and red onion. I'm not sure what sauce she used. Looks like a sushi bowl. I really wanna try it. The boys had it on their unleashed channel. Thanks!

    • @FatFingerFoods
      @FatFingerFoods  2 роки тому +1

      Yea we showed them how to make it lol.
      You can get Frozen Ahi Tuna at Aldi and cube it and mix it with purple onion and avocado.
      Then you use this sauce for it:

    Freezing salmon in a home freezer doesn’t make sushi grade fish but you wouldn’t need sushi grade fish for this anyways

    0:19 "сільодка" то москальською, українською - оселедець, але це зовсім інша риба... Це цікава тема, бо є багато різних варіантів маринування, наприклад моя теща вміє маринувати оселедець в сметані...
