Jacob Collier is amazing, I saw one of his videos on TV and it’s incredible how he turned his audience into a choir❤

The answer: His audience are mostly musicians so they know what they’re doing. 😂

No he almost always builds upon a pentatonic scale (like the famous Bobby McFerrin audience choir) and he fills in the additional 2-3 notes with major AND MINOR scales quite often. If he had his way, he wouldn't be bound by the 12 Western notes but alas.
Also, *only* modern Western-influenced audiences can hear "do, mi, so" and hear a major chord/scale. So you can't say "even if you're a non musician...whether you know anything about music or not, you'll be expecting a normal major scale." A raised 7th is definitely not intuitive globally.
I know you clarified that it's only in Western music. But he performs all over the world.
For example people raised with classical Indian music will naturally understand quarter tones, or people raised in Asia minor (ha, no pun intended, I just don't know the political term for the region) may naturally use Ionian scales, or, harmonize with a minor iv (fa)
... So yes he is hoping the audience has Western ears however he can do his audience choir anywhere in the world and he actually changes it every time. Even working with chromatic scales in the Rome audience. Melodic Harmony was in the Singapore version. It's a bit different everywhere he travels.
If you want the actual music theory behind it and not just "he uses the major scale" which seems too reductive, check this out:

Nothing to do with perfect pitch. (His or anyone's)
Nothing to do with the major scale. (At least not exclusively)

Thank you @aislynnmari for a much more well-rounded and inclusive explanation. What's the name of the video and creator you've linked?
