Brian these 1 hour recipes (like the quick pizza ones I always come back to) are my favorite content you put out! I really appreciate the effort you put into not just providing great recipes, but also making them accessible to us at home :)
Thanks G. I like showing the more lengthy process sometimes, but I find not a lot of people use those. These quick ones seem to be the sweet spot for people.
I think it’s great to have a “fast” and “slow” version. I’d love to see a video where you make fast and slow versions of a bunch of your recipes then do side by side comparisons of taste/texture!

Brian's videos are absolutely superior for both instruction and entertainment and i keep noticing little extra things he does that i dont see anyone else do. like actually SHOWING what results from a poor method, as in "this is what it looks like if you don't x". it's easy to miss but so so essential for learning! If anyone is wondering, once boiled, bagels generally freeze pretty well. So it’s quite easy to make a load, boil them and let cool, and then freeze - so that fresh bagels are only some oven time away! Not sure how well that would work with this quick recipe but I might have to try.

They freeze pretty well after baking too! 😊
You could perhaps cut the baking time by 5 minutes or so, and freeze them "half-baked". I haven't tried it with bagels but it works well for most bread recipes.
@@bierbrauer11 yeah but I'll bet they taste fresher if you freeze them raw and then bake them when you want them instead of freezing them after baking and reheating..

If you're like me and have 375ml bottle of beer, here is the recipe adjusted for you ,so you don't have to throw the rest of the beer or force it down your throat in the morning when people generally bake and don't drink

I wish I could attach a photo of crumbs that were left from the bagels. My kids said they were the best bagels ever. And they are bagels connoisseurs.
This long weekend is all about Brian's creations lol- I have pizza dough fermenting in the fridge. We don't even go out for pizza anymore because we make it better than most places😅 thanks to you Brian

I love & appreciate that you make videos that cater to everyone. You know your Audience well enough to know that sometimes we want to take our skill up a notch and make a next level meal, but there are other times where, with time constraints, that might not be possible but we still want something delicious. Good cooking and baking doesn’t need to ONLY mean long fermentations and spending the entire day in the kitchen. YOU CAN have great food that doesn’t take all day. It’s important to make food accessible - and your videos like this & the weeknighting series definitely do just that.

Brian, I made these today for my brother and me. They were great! First attempt ever at something like this. I will try again soon for others now that the test dummies have survived. You are, by far, the most approachable high level chef on UA-cam. Easy to follow and always killer, no filler.
Gotta love the sheer creativity Brian has when it comes to some of his 1 hours recipes, would have never thought to use beer to replicate long fermentation.
I'm sure Brian would tell you that this is hardly one of his original techniques; pretty much any recipe you find that touts a short wait time with a dough that usually would need 48+ hours to rest (bagels, pizza, etc) is going to use beer to mimic the flavor that comes from natural fermentation.

Hey Brian, I made these yesterday and they are amazing! I made a 1/2 dozen and did 2 plain, 2 everything and 2 sesame. My wife, (my harshest critic) LOVED them. To the point that she didn't want to give any to my daughter, lol. I don't have a food processor so I did carefully use the stand mixer. Looking forward to making many more. Made these yesterday - delicious!! Thank you for the recipe Brian.
I adapted it for my stand mixer.
First I added hot water to the mixer bowl to warm it up.
After the beer was at 105°f, I added the yeast, sugar & salt. I stirred that up to help dissolve the yeast granules.
Then I added the flour (I only had AP, not bread but it is a high protein content), started on low, added about a tablespoon of water (since it’s such a dry dough), then once it was all together - mixed for 6 more minutes on med-high.
They came out great, though I’m still not 100% sold on the ‘roll out and wrap around your hand’ method. Just need more practice I suppose.

I love cooking but I don’t have those things in my kitchen so sometimes it’s disheartening to see recipes where it’s always assumed that you have all these kitchen gadgets but we’re old school at my house. We have bowls, spoons/spatulas and our hands.

I made the pro level bagels so I already had everything I needed for this video, and I used the bagel boards too. I live in an area where my only choice is Einstein bagels so I don't really eat bagels too often, this is another reason why you're one of the best on youtube right now!
