Good video! I own an M1 Mini that I am using to edit on FCP for 4-6hrs a day. I got the maxed out version, and edit off an External 2TB NVME. It is decent, in fact, it's actually GOOD, until I have a 4K job, adding a ton of effects, titles, multicam footage sound mastering and color grades/LUT's. It's crashed on me several times and it's super frustrating. All in all, it was a great buy, and I'm using it until my company profits enough to upgrade to a studio w/32GB RAM, which I believe is the best option as you stated for a video professional.

I have both and soon will be letting go of the Mini M1. Reason - Mini is a great little machine but alas, I ran into too many times when 16 gigs of RAM was filled quickly and interrupted my use of certain apps. Seems that one could leave a couple of browser tabs open and take up 1-5 gigs of space depending on the web pages. This lack of memory management is a serious issue for some people who too have the same problem. The Mini has plenty of "power" for typical apps and it is a shame about the memory management issue. I'll simply leave with this - according to Memory Diag app, with only this browser page open, Safari is taking up 3.72 gigs. Imagine a few other tabs and lesser apps open such as email and messages.
