Lolz I would've loved Ken to go ballistic and tell it like it really is. He doesn't even have to bring up the whole cultural aspect of cooking turtles. If it's eatable and not endangered, then the damn thing can be cooked.

What a superb series.Thanks for this one especially really brings back some great memories of working in a family run restaurant and the priviledge of being welcomed and introduced to Cantonese and other Chinese culture by my boss, his family and my colleagues. Great People & great food.
I really enjoyed this series. Folks, this is a food (and depending on your opinion, cooking show) and thus, enjoy the beauty of the culture and ingredients. I learned a few more things that I would never know about certain areas of China. And to me that's 'Exploring'.

Please look up the types of turtles before commenting. True, certain turtles, such as sea turtles, are endangered, but those in reference, particularly in the market, are farmed and/or freshwater turtles--derived from aquaculture and are sustainable.
I've eaten turtle, quite nice, like a beef texture with chicken flavour.. If turtle can be raised sustainably then why are they any different to eating chicken etc
Considering all birds are actually descendants of dinosaurs, I don't see any difference between eating chicken (which is a dinosaur species) and eating turtle lol as long as they are farm raised of course.
In the context of aquaculture-raised turtles, as seen in this episode, those turtles are not endangered--nor are the alligators. They're sustainably raised. Best not to mix them up with sea turtles, which are endangered. What the Chinese want to eat is up to them (again, a cultural preference).
Alligator is pretty good, by the way. You can find it in the Southern United States in fried form a lot. It genuinely does taste a bit like a leaner chicken with a better texture, IMO.
I think Ching's reaction to the turtles was very human - and I'm impressed that the editors left it in considering that she could be interpreted as being insensitive to cultural norms...
Yes,it is diverse. Actually, every province has their own unique way of cooking food.Sure,different tastes as well. I am a cantonese from Guangzhou. I think Cantonese Food is special cause you cannot find any spicy in it. You know... every other styles of chinese food has spicy dish. If you like spicy food... sichuang food is the best which you can watch in the Episode 2.

I'm Chinese from California and I don't think it's odd at all that my culture eats turtle or shark. In fact, I'd love to try it one day.
I think it depends on the animal we are talking about, for example shark fin soup is a normal and cultural-related dish in china but its has started to beend regulated by the gov due to the endanger of the specie, theres also some turtles subspecies in danger that need to be either regulated or banned, but if its not an endangered species i think theres no diference and can be eated
Totally agree with you there! If turtles shouldn't be eaten because they look cute or harmless, then I suppose veal (rabbit meat) should be off the tables as well. What about goose and sheep? They are beautiful and cute & cuddly too! As long as we stray away from the endangered species and those that are bad for health, one should respect the locals' food culture, and stop talking about imposing restrictions based on other foreign cultural mindset. Let Chinese cuisine be Chinese cuisine. Period.
Ken Hom, the Godfather of Chinese Cuisine? Don't be ridiculous! He was born in America and is American. Became known in the UK. Lives in Thailand and France. Very little about China. Most of my Chinese friends here in China thought his TV programs were satirical comedy. shows.

They complimented chinese cuisine countless times during those 4 ep, expressing their admiration for the cooking skills and the whole purpose of the trip is to learn more about traditional chinese food/traditions. You can't just take one emotional biased comment of them and question their integrity.
The local cooks are far better then the presenters who are always condescending. In fact you see through the series the people couldn't care less of who they are,because they were not cooking,authentic food.They used the same ingredients almost everywhere they went.They are not even Chinese. they grew up abroad He can hardly speak or understand the language.Go there and learn don't pretend just because you grew up in the west you know better.
I would say most people don't care what they eat as long it's not endangered & they rear the live stock with care ONLY then is it fair(kind of) but more importantly it's responsible. Truth is many animals ARE endangered in & around China because of over consumption in China. You won't agree because your too happy about being Chinese but the truth is the truth whether you accept it or hide it.

Ching was very ignorant on the topic of turtle. Thousands of years of tradition and she just hands down tell the chinese people this is cruel. From her journey around China, she would have known better.
They go to china to taste the chinese food if that means turtle or aligator so be it,she took the rasor clamps and i bet you got people having a opinion about that to,just go with the flow and eat what is on offer,if not go back to the UK and eat fish and chips.
