    After watching them learn about Chinese cooking and culture in this series, I was surprised by her turtle comment, but Ken Hom handled that situation very maturely. Respect for that man!

      Same, alligators didn't disturb her but turtles did 🤔very weird attitude to have. To be honest she's not a very good cook

    Wow, what a treat this 4 hours was for this California guy... So glad this was posted here for us Americans to see, It really was an extradonairy series for us Chinese food and culture fans, and so good to see more of Ken Hom and Ching-He Huang...

    JUST A WONDERFUL SERIES AND THOUGH I HAVE WATCHED CHING AND KEN INDIVIDUALLY, TOGETHER THEY'RE WONDERFUL. MY DAD WAS A WAITER IN ONE OF THE WORLD'S GREAT CHINESE RESTAURANTS HERE IN MONTREAL "RUBY FOO'S" HE SERVED SOME OF OUR PLANET'S GREAT SPORTS HEROES AND CELEBRITIES AND WAS GIVEN THE MOST WONDERFUL AROMATIC CIGARS FROM CUBA EVER. THIS I'LL NEVER FORGET.

    Lolz I would've loved Ken to go ballistic and tell it like it really is. He doesn't even have to bring up the whole cultural aspect of cooking turtles. If it's eatable and not endangered, then the damn thing can be cooked.

    Versatile Cuisine from west to east, from north to south I love it, yin/yan in the cuisine fascinates me and the textures and colors...Love this series thank you for uploading in it, I love Oriental Food!

    What a superb series.Thanks for this one especially really brings back some great memories of working in a family run restaurant and the priviledge of being welcomed and introduced to Cantonese and other Chinese culture by my boss, his family and my colleagues. Great People & great food.

    I really enjoyed this series. Folks, this is a food (and depending on your opinion, cooking show) and thus, enjoy the beauty of the culture and ingredients. I learned a few more things that I would never know about certain areas of China. And to me that's 'Exploring'.

    It's much better if only Chine-He presented in the documentary, I love the way she speaks, when she speaks mandarin, her voice is very sweet.

    Her reaction to the turtles was totally uncalled for. It's really nothing like shark-fin soup b/c the turtles aren't endangered. Considering it cruel/inhumane is really just an arbitrary cultural value not an ecological principle or an environmental concern

    Please look up the types of turtles before commenting. True, certain turtles, such as sea turtles, are endangered, but those in reference, particularly in the market, are farmed and/or freshwater turtles--derived from aquaculture and are sustainable.

    I've eaten turtle, quite nice, like a beef texture with chicken flavour.. If turtle can be raised sustainably then why are they any different to eating chicken etc

      Considering all birds are actually descendants of dinosaurs, I don't see any difference between eating chicken (which is a dinosaur species) and eating turtle lol as long as they are farm raised of course.

    In the context of aquaculture-raised turtles, as seen in this episode, those turtles are not endangered--nor are the alligators. They're sustainably raised. Best not to mix them up with sea turtles, which are endangered. What the Chinese want to eat is up to them (again, a cultural preference).

    Alligator is pretty good, by the way. You can find it in the Southern United States in fried form a lot. It genuinely does taste a bit like a leaner chicken with a better texture, IMO.

    I think Ching's reaction to the turtles was very human - and I'm impressed that the editors left it in considering that she could be interpreted as being insensitive to cultural norms...

    Yes,it is diverse. Actually, every province has their own unique way of cooking food.Sure,different tastes as well. I am a cantonese from Guangzhou. I think Cantonese Food is special cause you cannot find any spicy in it. You know... every other styles of chinese food has spicy dish. If you like spicy food... sichuang food is the best which you can watch in the Episode 2.

    I understand the whole modernizing part if she's talking about saving endangered species. But if she meant it just as turtles aren't eaten in the West kind of way, then I really can't see that. I'm Chinese from California and I don't think it's odd at all that my culture eats turtle or shark. In fact, I'd love to try it one day.

    I think it depends on the animal we are talking about, for example shark fin soup is a normal and cultural-related dish in china but its has started to beend regulated by the gov due to the endanger of the specie, theres also some turtles subspecies in danger that need to be either regulated or banned, but if its not an endangered species i think theres no diference and can be eated

    Totally agree with you there! If turtles shouldn't be eaten because they look cute or harmless, then I suppose veal (rabbit meat) should be off the tables as well. What about goose and sheep? They are beautiful and cute & cuddly too! As long as we stray away from the endangered species and those that are bad for health, one should respect the locals' food culture, and stop talking about imposing restrictions based on other foreign cultural mindset. Let Chinese cuisine be Chinese cuisine. Period.

    Though those alligators are bread and farmed, just any other meat you eat (assuming that you aren't vegetarian, that is).

    Agreed although turtle, like many species of shark, are endangered species. That's the difference between turtle and cattle.

    Don't be ridiculous! He was born in America and is American. Became known in the UK. Lives in Thailand and France.
    Very little about China.
    Most of my Chinese friends here in China thought his TV programs were satirical comedy. shows.

    What i find annoying is when western people say that eating things like turtle is just not right. well what is the difference between a turtle and chicken. They're both animals in my view. Cuteness is not a factor. If you're going to advocate banning one, then you should ban eating all animals, even lamb and veal. Just like the west is accustomed to rearing cattle and slaughtering them, the cantonese feel the same about their more 'exotic' animal choices. So yeah, that girl's argument is invalid

    I guess u don't really mean what you said (lost respect for blala).
    They complimented chinese cuisine countless times during those 4 ep, expressing their admiration for the cooking skills and the whole purpose of the trip is to learn more about traditional chinese food/traditions.
    You can't just take one emotional biased comment of them and question their integrity.

    The local cooks are far better then the presenters who are always condescending. In fact you see through the series the people couldn't care less of who they are,because they were not cooking,authentic food.They used the same ingredients almost everywhere they went.They are not even Chinese. they grew up abroad He can hardly speak or understand the language.Go there and learn don't pretend just because you grew up in the west you know better.

    I would say most people don't care what they eat as long it's not endangered & they rear the live stock with care ONLY then is it fair(kind of) but more importantly it's responsible. Truth is many animals ARE endangered in & around China because of over consumption in China. You won't agree because your too happy about being Chinese but the truth is the truth whether you accept it or hide it.

    If the alligators and turtles are raised to consume there's nothing wrong for people to purchase them, the culture needs to be respected too. Yet to me it is still cruel, I won't eat them anyway.

    What the hell is wrong with this episode. The title is "exploring China : a culinary culture" and they're doing all dishes. He's not even discovering and show us their cuisine skill...
    Better make a simple cooking show which title would be : "check my skill"

    Just lost respect for Ching during her turtle comment. She just ignorantly discounted thousands of years of Chinese traditional food with her ignorant "China should modernize" food comment. Who is she to judge? I understand she's Westernized but if this is a cultural journey, I would have expected better from her. Glad to see Ken indirectly (and politely) told her to stfu.
