There was this one convenience store on the way home in the state I used to live in, and about once a week I would stop to get a slice of pizza from the self-serve warmer. Once in awhile, the pie in the warmer would have been the victim of a ghost cut. I'd be standing there, with the one pair of tongs, trying to separate a slice of the pie but it just wasn't going to come. It was a shame, because it was really tasty for convenience store pizza.

I worked at little Caesars and would cut 2 pizzas in less than 5 seconds. I would use a push/pull cutting motion like a pizza cutting ninja. I went into a local LC to get some crazy bread. I started talking to the manager about my days working at LC and told him that I could cut a 4 minute batch of dough. He said that was not possible. At the time the one of his worker was making dough. I bet him the price of the crazy bread it could still do it. I washed up and got an apron one, and gloves. With the dough on the table I started and the manager timed me. I cut the batch into large doughy balls in four minutes and his worker could not keep up. I also got a free pizza.
Used to work three stations at once myself. Realistically speaking the oven couldn’t keep up with my pace. I’ve also have done dough just as fast. Longest I’ve seen dough take for a single batch was about two hours. I had to transport the supplies and mix dough at another store while the mixer at ours waited for repairs. I’ve also worked at Pizza Hut as well and they don’t even make dough they just pull it out of a box in the freezer and thaw.
I worked at a couple of mom and pops pizza shops over the years. I lied one time and said I could toss dough. Got hired, watched a couple UA-cam videos, and years later I am the guy tossing 2 pizzas at once. Everyone has their own flow and I always love watching it.

For a lot less you can get a mezzaluna or machete(stainless steel only for food) and have a blade as long as the pizza is wide. Slap it down, rock it back and forth, much easier to track Also, visualise a pie chart, it really helps, or just buy a circular chopping board and mark/scratch guidelines into it
for a private household thats too expensive i agree. But for Pizza Places and Fast food chains? A nice investment. Not everyone is blessed with perfect handy eye coordination. It will increase efficiency AND reduce customer complaints :P

I never knew it was a widely used term. I used to do this if people were rude and impolite while ordering. You’ll still get what you asked for but have fun with your pizza not being cut through the whole way 😁

Was gonna say, rocker knives are vastly better than the stupid wheels. Easier and faster to use, WAY easier to clean, I would assume somewhat easier to sharpen...

Local pizza shop I go to has this little projector guide set up above where they cut the pizza that can be adjusted to make the perfect cuts. They can change the amount of slices and/or the way it’s sliced. I love it😅
Normally uneven slicing doesn't bother me, people can just pick the size of the slice they want but last week we got one sliced into eight and one slice was easily 1/3 of the pizza.

That's why a regular pizza knife (the one that's about two feet long and has handles on both ends) is the best. You just wipe it off when it gets covered in nasty.

Yes!! As a kid, while my siblings fought over the biggest pieces I just gorged myself on all the little ones. I always walked away full, with practically no confrontation- until my little siblings caught on and started going for the little ones too smh.
Uneven isn't a problem unless you're selling them by the slice, in which case it can be a significant issue. I used to slice cakes at work and we'd put the small ones in with the large ones, so that the pair would even out. But, over time, the size differences between the small ones and the large ones I was cutting got to be hard to identify.
Washing it is definitely the issue for me. I'm a very practical home cook, and while a lot of devices and tools are really neat in theory, they're a nightmare to clean and store. The frame guide is a cool idea, but for it to be practical, it would need to break apart into halves or fourths so you could fit it in a dishwasher, or simply get the pieces in a sink to hand-clean them.
Get a rocker blade. It's much easier to cut a pizza with than the rolling cutters. And I find it much easier to cut even slices when I can cut through the entire pizza with one slice. Fits in my dishwasher, and cheap ones are about $30.
just hand wash it? should take like 60 seconds or less. get washcloth soapy, wipe down all parts, rinse with the sprayer. set inside oven on rack with door slightly open to allow to dry
that cutter is also a costco thing...its mainly for cost efficiency more than it is making the perfect slice... to them the perfect slice means the perfect amount of pizza being cut and sold per slice. Hence the guide. A pizza place will rarely opt to use one of these because what do they care if a whole pizza goes out to a customer with a few uneven slices....but by the slice shops prolly love these things because they can measure the slices perfectly for cost margins.
but costco is still making slices from the pizza and it's not like there's wastage, the whole pizza will be sliced up so i'm confused as to how it would be cost efficient. for stuff like cheese and sauce quantity it makes sense that they don't want to give extra, but if they give too large a slice it doesn't really matter because that same pizza will just have a slightly smaller slice for the same price right?

Our local pizza place cuts their large pizzas into 16 pieces, but not triangular pieces. They just do 3 parallel cuts down and across. That always leaves 4 'corner' pieces, which I actually prefer. they don't sag when you try to pick them up, and they tend to have crispier crusts.

If you're having trouble making good cuts at home, make sure your pizza cutter blade doesn't wobble. I used to make ugly cuts every time, but after getting a cutter with a tight blade it's so much easier. Otherwise, the faster you do it the easier it is. This is also true for drawing straight lines in general. Don't overthink it lol!
I used to work in a grocery store bakery and you see the same sort of thing with cake slices. It might seem harder, but I think the cakes are probably a bit easier to cut evenly, because you can move the knife around a bit, once you get a sense of how to divide things, it gets pretty easy.

This is really useful. If I can't cut paper evenly I sure as hell won't be able to do that with Pizza. Also I've heard of the ghost cut. God it's so annoying. When you try to pick off a piece and you have to literally tear it off that also adds to the unevenness
Worked at little sleazers when I was a teenager. We did things like the spiral cut and the paisley cut, and the no cut. Never thought of the ghost cut.
Worked Chuck E Cheese, we had the see-saw knife for pizza cutting, the trick was to get the first three cuts, the next three would practically cut themselves. The ten slice was the difficult one, trick was to use the width of the blade to line up the second cut, then match it for the next 3. As long as it wasnt really backed up, pizza were even stevens.
I don't know why but when he said don't worry I got it, I felt relieved. I felt rescued from worrying about trying to find an item that I didn't know I needed.
Tbh I never really thought about uneven cut pizzas. Now that I think about it, I have had many a pizza where each slice wasn't the exact same cut. But here's the thing for me personally. It doesn't matter, as I'm the only one eating that entire pizza, and not even a ghost cut would bother me that much (I'd just fold those 2 slices like a sandwich).
Ghost cuts can also be the result of employees who are afraid of the knife (it _is_ a big knife), or lazy employees (don't press hard enough when cutting), or very short employees (don't have enough leverage to fully rock the knife). I always made sure to get one or two slices cut extra small. Everyone who eats pizza will come to a point where they want another slice but not a whole slice because that would be too much. The skinny slices are the "last one" slices and every pizza needs one or two. The _only_ reason perfectly even slices need to exist is if the shop is selling by the slice and they want to ensure consistent portion size.
I'm rather squicked at the way it seems they just use that thing over and over without cleaning it between times. I don't want funky dried sauce dropping onto my pizza.
I never worked a restaurant.. But I'm a fatty so I eat a lot of frozen pizza. My way of doing it at home is to follow the "rule of halves". The hardest part is the first 2 slices to make a perfect T. After that T, you just guess the mid point between each corner and start from that midpoint and slice to the center of the pizza. If you're feeling really rambunctious, follow through he middle of the pizza and connect it to the next mid point between the corners across. If you're not brave.. lol... just rotate the pizza instead of going through the middle of the pizza ha.
As a man who makes a home made pizza several times a week for the family, from flour, I'd love an easy cut device. But i'm cool without cluttering our small kitchen space with more hardware.
Yeah, I'm one of those that can't cut pizza evenly. I have OCD for things to be when and the first cut looks fine. Then the second cut is off. No matter how hard I try or how many times, I can't it straight. Same with hair or anything else.
I’d probably use this like crazy. I have one eye with a different prescription than the other (and I honestly think the prescription is off.) so I always cut the pizzas crooked AF. It bugs me massively and is a huge shame to my family lol.

I like the long blade cutter. You can do it regular cut or my favorite, square cut, and it's quick.

the dominos near me sometimes has abad time cutting, the crust on the edge usually isnt cut at all and its a garentee for atleats one ghost cut

Worked at little sleazers when I was a teenager. We did things like the spiral cut and the paisley cut, and the no cut. Never thought of the ghost cut.

I used to work at Jet's Pizza, and we had a machete-style pizza cutter. It was really difficult to mess up cutting pizza unevenly.

Worked Chuck E Cheese, we had the see-saw knife for pizza cutting, the trick was to get the first three cuts, the next three would practically cut themselves. The ten slice was the difficult one, trick was to use the width of the blade to line up the second cut, then match it for the next 3. As long as it wasnt really backed up, pizza were even stevens.

With a little bit of string, some basic division, and a measuring tape, you can easily make your own pizza cutting stencil.

Tbh I never really thought about uneven cut pizzas. Now that I think about it, I have had many a pizza where each slice wasn't the exact same cut. But here's the thing for me personally. It doesn't matter, as I'm the only one eating that entire pizza, and not even a ghost cut would bother me that much (I'd just fold those 2 slices like a sandwich).
The problem with ghost cuts is they usually pertain to the whole pie, not just one or two slices.
Ghost cuts can also be the result of employees who are afraid of the knife (it _is_ a big knife), or lazy employees (don't press hard enough when cutting), or very short employees (don't have enough leverage to fully rock the knife).
I always made sure to get one or two slices cut extra small. Everyone who eats pizza will come to a point where they want another slice but not a whole slice because that would be too much. The skinny slices are the "last one" slices and every pizza needs one or two. The _only_ reason perfectly even slices need to exist is if the shop is selling by the slice and they want to ensure consistent portion size.

I never worked a restaurant.. But I'm a fatty so I eat a lot of frozen pizza.
My way of doing it at home is to follow the "rule of halves". The hardest part is the first 2 slices to make a perfect T.
After that T, you just guess the mid point between each corner and start from that midpoint and slice to the center of the pizza.
If you're feeling really rambunctious, follow through he middle of the pizza and connect it to the next mid point between the corners across.
If you're not brave.. lol... just rotate the pizza instead of going through the middle of the pizza ha.
A smaller version of this was around back in the 60’s for cutting even fruit pie slices.

As a man who makes a home made pizza several times a week for the family, from flour, I'd love an easy cut device. But i'm cool without cluttering our small kitchen space with more hardware.

Yeah, I'm one of those that can't cut pizza evenly. I have OCD for things to be when and the first cut looks fine. Then the second cut is off. No matter how hard I try or how many times, I can't it straight. Same with hair or anything else.

I’d probably use this like crazy. I have one eye with a different prescription than the other (and I honestly think the prescription is off.) so I always cut the pizzas crooked AF. It bugs me massively and is a huge shame to my family lol.
