When I was in service, there were 3 appliances I bought. An electric skillet, a crockpot and a percolator coffee pot.Living in the barracks, there were no stoves or ovens and after awhile one got tired of eating at the chow hall, I'd go to the BX and get some food for home cooking. I used to "bake" my pizzas on a cookie sheet inside the electric skillet. I never thought about "baking" in the crockpot, but this appears very doable.
I really like that you point out that you can use AP flour. I watched a comparison video between bread flour and AP and they showed there's little difference in the results, but most hardcore breadmakers won't admit that.
Update: I made my flaxseed bread without sugar or oil last night in my crockpot and put water on the bottom of the crockpot and cooked it for 2.5 hours and the texture and taste was amazing. Taste like cake. I drizzled butter and honey on the top. The only prob was it wasn't brown at all on any sides, but was thinking nxt time I could use a creme Brule torch to give it a little color. But taste was omg amazing. Thank you again.
Toaster ovens are excellent for browning/crisping but need to watched like a hawk. Intense dry heat in such a small space can easily burn foods. I can't tell you how often I've set tortilla chips ablaze !

When cooking bread or cake in a crock pot, two sheets of good paper towel can be placed over the top before putting the lid down. Let the papers be held in place by the weight of the lid and NOT touching the food. Shorter time. It works nice too. If you can find different size containers to use in the crock pot that is good too. We used to use a small metal coffee can inside a rounder and taller crock pot and it was good. Made good carrot cake in it.
I plan on baking a no-knead bread in my small crock pot. Here is a tip ; Put a paper towel just under the lid. That way the steam won't fall back onto the dough. Thanks for the idea of crock pot bread!
Thanks for the tip & another when the baking chicken in a crock pot put a plastic bag under the lid that way the chicken will cook in the steam & be very moised &suculant

that was really interesting. I thought you had to put some liquid in the crock pot, but you just inserted your bread in the pan straight on "high" - and I am amazed that the inner stoneware pot did not crack or break! Wow! You sure taught me something - thank you!!! :-)

I have to admit that I liked the look of the oven baked one rather than the crock pot one; however, they both turned out well. Baking bread in a Halogen Oven is also great, and turns out just as it would in a conventional oven. :)
Agreed!! I like the look bread in a traditional oven, but if for some reason someone lives in a small flat or something, and they don't have an oven, and only a microwave and hotplate and crockpot, they can still make bread! :) haha
Sorry to hear you oven broke, Dana! Just put the dough in, after you let it rise once, and then shape it and put it in the bread pan. No need to really do that second rise that I show in the video, since if you put it in the crock pot at room temp, it will have some additional rising time while the crock pot heats up. If that makes sense? Let me know how it turns out. You can also put a little bit of water on the bottom of the crockpot if you are using a bread pan for the dough.
Thank you for sharing! The oven loaf looks tastier and more like a loaf of bread should look. I would eat the crockpot loaf too but maybe use it for grilled cheese sandwiches or something of that nature. Making croutons out of the crockpot bread would be great too!
It is possible that someone lives in a small flat and doesn't have an oven, just a microwave and a hot plate, in that case the crockpot bread could come in handy. I have also had some loaves turn out a little more presentable then the one in the video.
@@inthekitchenwithmatt Some people recommend putting some paper towels over the top, then putting the lid on (soaks up extra moisture) but don't know how that would work with your "dough in tin" method.
Yep! I don't particularly like moist bread so I don't add the water. I thought I mentioned the water in this video, but maybe it was just on my recipe blog post about it.

What do you think about using turkey roaster, which is basically a giant crock pot, but it has temperature dial. I am wondering, if I should just use same temperature and time as for the regular oven or change it somehow? My comes up to 450F.
I made another dough recipe in the crock pot. For some reason I decided to start this at 9pm. Figured I have a half hour left I set my alarm. Woke up two hours later. Not bad but was a little dry.
Cool! Glad you tried it! :) Yeah not the best way to bake bread, but it works! And if for some reason your oven isn't working, or you live in a small flat without an oven, this is an option.
Can you add anything to the bread dough before you bake, like herbs or anything? Will the crust be as crispy if the bread has direct contact with the Crock-Pot (instead of using a pan)? I plan on trying this soon, thank you for your clear directions!
Hi Tiffany, yes you can add herbs in with the dough. :) The crust will be even crispier if you just use parchment paper and no pan. Another thing you can try is putting a little wire rack or some metal washers in the pan to elevate the pan so it isn't touching the pot. Let me know how yours turns out!
Several ways to do it. That is a classic bread loaf pan that I used. You could even forgo the pan altogether and just use parchment paper and make a round loaf. Or use a rectangle cake pan. It all depends on the side and type of crock pot/slow cooker you have. I wouldn't use wax paper, parchment paper is a better idea.

I wonder if you put the bread pan on a little wire rack in the crock pot or somehow reduced contact with the ceramic if it'd lower the temp and make it less crispy on the sides?
Yes!! I think it would work, I haven't tried that yet, because I don't have a little rock small enough to fit. However my rack that came with my air fryer accessory kit might just work. you could put a little bit of water in the bottom as well.

Hello Alexa, it is only 1/3 cup not 2/3. You can reduce the sugar if you like. It won't wind up tasting the same. But the dough should still rise. Just add at least a tsp. of sugar for the yeast.
I couldn't say, Teresa, I have only done yeast-based loaves. my guess is a few hours. You will just have to test it. Try 2 hours and then test with a toothpick. Also, almond flour bread recipes are not my specialty.

Question: Have you tried elevating the pan from the bottom of the crockpot? Wondering if that would result in a less crispy texture on the bottom & sides. If I get a chance, I'll try it and post an update, but my wife and I are low carb dieting and she might hate me for it. LOL! Thanks again!
You are welcome! I actually haven't, but that will probably work. You could use the small racks that you can get for air fryers which would be perfect to elevate it.
Hi Heather, I haven't tried banana bread in the crockpot, but it will work fine. Bake on the high setting for 2 to 3 hours until a toothpick comes out clean. :) And you can just grease and flour the crockpot and pour the batter on the bottom, so it makes a flat disc shape, or use a pan that fits.
that is the same size I used in the video. If you only want to make one loaf, divide the bread recipe in half. Or make two loaves, and keep half of the dough in the bowl covered in the fridge, while baking the other half.
Why do you add so much sugar to bread? Bread is just flour and salt in its most basic form, and tastes better that way than any other. I just do not understand this fascination, mostly American but in other countries too, with adding so much sugar to absolutely everything. I love the idea of cooking bread using a crock-pot as an oven; really great idea! Makes me think that some other dishes that were formerly cooked in the old Dutch Oven by the fire can be ported over to cooking in the crock-pot as well. I'll have to try a few. P.S. Did you know that Bed-Bath-and-Beyond appears to be using parts of this video in a commercial of theirs? At least it looked just exactly like it anyway, right down to the black crock-pot, three hour cook time and slicing the bread. Thought you might want to check it out if you don't know anything about it.

Here are some notes I pulled from online about sugar and bread: Sugar has a few effects in bread:It helps make it soft and tender by absorbing some of the water and slowing down the formation of gluten strands.It feeds the yeast, resulting in a faster rise.Via caramelization, it aids in the browning of the crust.It acts as a preservative, keeping the bread fresher for longer (though 1tbsp probably doesn't make a lot of difference).It does have some effect on the flavor.

This looks great but as I’ve used my crockpot quite regularly I know that you get condensation inside the lids that drips onto the food. How would I stop that for this recipe?
Question: did you use an 8 qt. slow cooker? The bottom of my 6 qt. slow cooker is 9 x 6" inches. I was just wondering if the 8 x 4 loaf pans would fit. Also, I wonder if you elevated the the loaf pan off the bottom of the ceramic pot the bottom of the bread would be less crispy.
Hi there! The bottom of mine is 11x7 inches or right around there. The 8x4 should fit fine. Yes if you have a little rack you can put in there or metal washers even stacked up. You can put a bit of water on the bottom as well.
I was thinking the same thing. Maybe a small ball of foil on each corner. And I've seen some people put a paper towel (or you could use a kitchen towel??) under the lid to keep the moisture off the top of the loaf. As a precaution...I lined the bottom of the crockpot with parchment before putting in the pan because I discovered the metal pan can scratch the crockpot interior. Someone else used aluminum foil...but do not use it, because it scratches the ceramic crockpot.

Hi Matt, Great looking loaf but just a little concerned as to how much yeast you are using in such a small loaf. Isn't that going to be the main taste of the loaf ? I use a 7g sachet in the same size loaf, I recently lost my oven (we have a combi oven) for 2 weeks, I tried making my same ingredients loaf in a cast iron skillet, successfully ! can i sometime send through and ask if you'll make a video on the (no knead) wholemeal loaf, it is so easy to make. its known as the Grant loaf) a couple of others on here have tried but cant stick to the original recipe
Hi Jon! No that amount is for the entire bread dough which I divided into two loaves. So that loaf that you see in the crock pot is only half of the amount of dough. :) I do have a no knead bread recipe done in a dutch oven, but it is not whole wheat/meal. It depends on where you live. Slow cookers/Crockpots are designed to be on for 8 to 10 hours at a time, and here in the states it costs about 20 cents to run one that long. So 2 to 3 hours it would cost around 7 to 9 cents probably. At least here in the United States.

You will have to experiment. You may be okay on low the whole time, but it will take longer. Or try it on high. Just watch it so it doesn't get to brown on the sides. :)
Hi there, 2.5 to 3 hrs on the Hi setting. Most crock pots here in the states don't have a Temp setting, they go my Lo and Hi settings. But I believe the Hi setting is around 300 degrees F. I haven't tried it with a gluten free yeast free loaf, but assume it will work. Let me know how it goes! :)
Can 100% Almond or Coconut bread come out the same if cooked in a Crocker pot slow cooker..??? I can't have all the sugar 🚫🍚and wheat flour 🚫🌾 What modifications would you do..??? Have you ever tried using Almond or Coconut flours..???
Hello Penny, I am sure you can make other kinds of bread in the crockpot. Unfortunately, I don't have a ton of experience making bread with coconut flour or almond flour. I only use almond flour/meal for my macarons haha.

Great question! So you could make the dough then let it rise for just an hour, then divide it in two and place in your bread pans, then instead of letting it rise again before putting it in the crock put, just put it in right away, it will still rise in the crock pot, then the other loaf just cover with kitchen sprayed plastic wrap, and that will just continue to rise. More rising time will effect the outcome a little bit, but not much. generally the more you let dough rise the softer and airier the bread will be. Or if you have a really big crock pot and the 9x5 pan will fit in it, then you won't divide the dough because the whole thing will fit in that size pan. The other option, would to use parchment paper and not bread pans, and just form the dough into a big ball and put that in the crockpot, if that makes sense. :)
yes you don't take the lid off. I didn't take the lid off in the video until it was done. 90 minutes is probably not long enough, but you can always give it a try for that long.
only thing is, I thought that the crock pot should not be turned on without it having some liquid ...so it may be just the directions that came with my crockpot...I don't know.
Most bread or at least sandwich bread has some sugar in it. The main role for sugar in yeast breads is to provide food for the yeast. Will it work without sugar? Yes. But the sugar also helps to make the bread soft and tender by absorbing the water and slowing down the formation of gluten strands. It also acts as a preservative keeping the bread fresh longer. And of course it adds a hint of sweetness. Try making the recipe with and without the sugar and see which one you like better. You don't even have to use the crockpot to bake them, you can use the oven.
@@inthekitchenwithmatt I m not used to add sugar in any bread beside the pinch for feeding the yeast and as bread is already processed to sugar in our body why add to it? I believe it s not necessary to make good bread.

Why SOOOOO much sugar. Yes, I know Yeast likes sugar, but you don't need to shove that much into a loaf. However, that DOES explain why most non Americans who visit the US say American bread is so sweet and tastes like cake. I think you only need the teaspoon to activate the Yeast and leave the rest out.
Sugar does way more to bread than just add sweetness, it effects the crumb, helps retain moisture, etc. And that is not that much sugar haha, it winds up being a little more than 1 tsp (5g) per slice of bread. That isn't a lot of sugar.

I have to admit that I liked the look of the oven baked one rather than the crock pot one; however, they both turned out well. Baking bread in a Halogen Oven is also great, and turns out just as it would in a conventional oven. :)
Agreed!! I like the look bread in a traditional oven, but if for some reason someone lives in a small flat or something, and they don't have an oven, and only a microwave and hotplate and crockpot, they can still make bread! :) haha

Sorry to hear you oven broke, Dana! Just put the dough in, after you let it rise once, and then shape it and put it in the bread pan. No need to really do that second rise that I show in the video, since if you put it in the crock pot at room temp, it will have some additional rising time while the crock pot heats up. If that makes sense? Let me know how it turns out. You can also put a little bit of water on the bottom of the crockpot if you are using a bread pan for the dough.

It is possible that someone lives in a small flat and doesn't have an oven, just a microwave and a hot plate, in that case the crockpot bread could come in handy. I have also had some loaves turn out a little more presentable then the one in the video.

Cooking it less time and adding a little water in the bottom of the crock pot while it bakes makes it moist inside & crispy outside.
Yep! I don't particularly like moist bread so I don't add the water. I thought I mentioned the water in this video, but maybe it was just on my recipe blog post about it.

What do you think about using turkey roaster, which is basically a giant crock pot, but it has temperature dial. I am wondering, if I should just use same temperature and time as for the regular oven or change it somehow? My comes up to 450F.
Yeah I think that would work! You may not want to raise the temp that high though. :)
I made another dough recipe in the crock pot. For some reason I decided to start this at 9pm. Figured I have a half hour left I set my alarm. Woke up two hours later. Not bad but was a little dry.

Hi Tiffany, yes you can add herbs in with the dough. :) The crust will be even crispier if you just use parchment paper and no pan. Another thing you can try is putting a little wire rack or some metal washers in the pan to elevate the pan so it isn't touching the pot. Let me know how yours turns out!
A flatter pan styled loaf, seated directly in the slow cooker for half the time of some waxed paper would have finished perfectly.
Several ways to do it. That is a classic bread loaf pan that I used. You could even forgo the pan altogether and just use parchment paper and make a round loaf. Or use a rectangle cake pan. It all depends on the side and type of crock pot/slow cooker you have. I wouldn't use wax paper, parchment paper is a better idea.

You will have to experiment with it and just try it. Crockpot baking bread isn't an exact process.

Yes!! I think it would work, I haven't tried that yet, because I don't have a little rock small enough to fit. However my rack that came with my air fryer accessory kit might just work. you could put a little bit of water in the bottom as well.

Hello Alexa, it is only 1/3 cup not 2/3. You can reduce the sugar if you like. It won't wind up tasting the same. But the dough should still rise. Just add at least a tsp. of sugar for the yeast.
Could you tell me how long to cook a 7.5 x 3.5 loaf that traditionally would back 35 minutes at 350! No yeast. Its an almond flour recipe.
I couldn't say, Teresa, I have only done yeast-based loaves. my guess is a few hours. You will just have to test it. Try 2 hours and then test with a toothpick. Also, almond flour bread recipes are not my specialty.

Hi Heather, I haven't tried banana bread in the crockpot, but it will work fine. Bake on the high setting for 2 to 3 hours until a toothpick comes out clean. :) And you can just grease and flour the crockpot and pour the batter on the bottom, so it makes a flat disc shape, or use a pan that fits.

that is the same size I used in the video. If you only want to make one loaf, divide the bread recipe in half. Or make two loaves, and keep half of the dough in the bowl covered in the fridge, while baking the other half.
Why do you add so much sugar to bread? Bread is just flour and salt in its most basic form, and tastes better that way than any other. I just do not understand this fascination, mostly American but in other countries too, with adding so much sugar to absolutely everything.
I love the idea of cooking bread using a crock-pot as an oven; really great idea! Makes me think that some other dishes that were formerly cooked in the old Dutch Oven by the fire can be ported over to cooking in the crock-pot as well. I'll have to try a few.
P.S. Did you know that Bed-Bath-and-Beyond appears to be using parts of this video in a commercial of theirs? At least it looked just exactly like it anyway, right down to the black crock-pot, three hour cook time and slicing the bread. Thought you might want to check it out if you don't know anything about it.

Yeah, I don't think it is that much sugar. But the beauty about bread recipes is that you can reduce the sugar to meet your tastes. Here are some notes I pulled from online about sugar and bread:
Sugar has a few effects in bread:It helps make it soft and tender by absorbing some of the water and slowing down the formation of gluten strands.It feeds the yeast, resulting in a faster rise.Via caramelization, it aids in the browning of the crust.It acts as a preservative, keeping the bread fresher for longer (though 1tbsp probably doesn't make a lot of difference).It does have some effect on the flavor.

This looks great but as I’ve used my crockpot quite regularly I know that you get condensation inside the lids that drips onto the food. How would I stop that for this recipe?
You could cover the bread loosely with aluminum foil. Or not worry about it. That i just steam from whatever it is you are cooking.
Put a tea towel just under the lid. I make cakes in my slow cooker and use the towel technique each time.

Hi there! The bottom of mine is 11x7 inches or right around there. The 8x4 should fit fine. Yes if you have a little rack you can put in there or metal washers even stacked up. You can put a bit of water on the bottom as well.
I was thinking the same thing. Maybe a small ball of foil on each corner. And I've seen some people put a paper towel (or you could use a kitchen towel??) under the lid to keep the moisture off the top of the loaf. As a precaution...I lined the bottom of the crockpot with parchment before putting in the pan because I discovered the metal pan can scratch the crockpot interior.
Someone else used aluminum foil...but do not use it, because it scratches the ceramic crockpot.
You certainly do that, but if you are careful with the bread pan, it won't damage the ceramic crockpot. :)

Hi Matt, Great looking loaf but just a little concerned as to how much yeast you are using in such a small loaf. Isn't that going to be the main taste of the loaf ? I use a 7g sachet in the same size loaf, I recently lost my oven (we have a combi oven) for 2 weeks, I tried making my same ingredients loaf in a cast iron skillet, successfully ! can i sometime send through and ask if you'll make a video on the (no knead) wholemeal loaf, it is so easy to make. its known as the Grant loaf) a couple of others on here have tried but cant stick to the original recipe
Hi Jon! No that amount is for the entire bread dough which I divided into two loaves. So that loaf that you see in the crock pot is only half of the amount of dough. :) I do have a no knead bread recipe done in a dutch oven, but it is not whole wheat/meal. It depends on where you live. Slow cookers/Crockpots are designed to be on for 8 to 10 hours at a time, and here in the states it costs about 20 cents to run one that long. So 2 to 3 hours it would cost around 7 to 9 cents probably. At least here in the United States.

Hi there, 2.5 to 3 hrs on the Hi setting. Most crock pots here in the states don't have a Temp setting, they go my Lo and Hi settings. But I believe the Hi setting is around 300 degrees F. I haven't tried it with a gluten free yeast free loaf, but assume it will work. Let me know how it goes! :)

Hello Penny, I am sure you can make other kinds of bread in the crockpot. Unfortunately, I don't have a ton of experience making bread with coconut flour or almond flour. I only use almond flour/meal for my macarons haha.

Q: While one dough is in the crock pot baking, its twin is waiting...for at least 2 hours. What happens to the dough that's waiting for its turn in the crock pot? ANDD, does that wait alter the bake time an? Thanks. : )
Great question! So you could make the dough then let it rise for just an hour, then divide it in two and place in your bread pans, then instead of letting it rise again before putting it in the crock put, just put it in right away, it will still rise in the crock pot, then the other loaf just cover with kitchen sprayed plastic wrap, and that will just continue to rise. More rising time will effect the outcome a little bit, but not much. generally the more you let dough rise the softer and airier the bread will be. Or if you have a really big crock pot and the 9x5 pan will fit in it, then you won't divide the dough because the whole thing will fit in that size pan. The other option, would to use parchment paper and not bread pans, and just form the dough into a big ball and put that in the crockpot, if that makes sense. :)

It doesn't have a temp, just a low and hi setting and an off setting.

I'd bake it for 90 minutes on high without uncovering (every time the slow cooker is uncovered it loses the majority of the heat).
yes you don't take the lid off. I didn't take the lid off in the video until it was done. 90 minutes is probably not long enough, but you can always give it a try for that long.
only thing is, I thought that the crock pot should not be turned on without it having some liquid ...so it may be just the directions that came with my crockpot...I don't know.
mmm yeah depending on what you are cooking, but generally adding liquid is not a requirement.

Really a good idea but why put sugar in it?
Most bread or at least sandwich bread has some sugar in it. The main role for sugar in yeast breads is to provide food for the yeast. Will it work without sugar? Yes. But the sugar also helps to make the bread soft and tender by absorbing the water and slowing down the formation of gluten strands. It also acts as a preservative keeping the bread fresh longer. And of course it adds a hint of sweetness. Try making the recipe with and without the sugar and see which one you like better. You don't even have to use the crockpot to bake them, you can use the oven.

Yes, I know Yeast likes sugar, but you don't need to shove that much into a loaf.
However, that DOES explain why most non Americans who visit the US say American bread is so sweet and tastes like cake.
I think you only need the teaspoon to activate the Yeast and leave the rest out.
Sugar does way more to bread than just add sweetness, it effects the crumb, helps retain moisture, etc. And that is not that much sugar haha, it winds up being a little more than 1 tsp (5g) per slice of bread. That isn't a lot of sugar.
