This machine is designed in such a way that the chocolate is constantly in working order, circulating in a closed circle. The temperature of the chocolate in the bawl is 45 degrees. So the tempering is completed after lowering the temperature from 45C to 31C? Don't you have to lower the temperature from 45C to 27C first, then warm up to 31C?
No. The Machine does it automatically. You just set the temperature inside the bowl (to melt or keep chocolate melted) and set the temperature of chocolate on the exit. Thats it :)
