    CREAMY ROASTED GARLIC MASHED POTATOES
    INGREDIENTS:
    1 cup peeled garlic cloves
    4 pounds of Yukon Gold potatoes
    2 cups of water
    1 - 16 ounce bag of roasted corn
    PREPARATION:
    Roast the garlic according to your preferred method. I simply put them in the air fryer for 10 minutes at 370. Place a 4 pound bag of Yukon Gold potatoes in an 8 quart pressure cooker with 2 cups of water. Cook at high pressure for 12 minutes and let it come down to pressure naturally. Add the roasted garlic to the pressure cooker and mash the potatoes directly in the pressure cooker with the cooking water. Add any other seasonings you enjoy. Stir in a one pound bag of roasted corn if desired. Enjoy!!!

    I love corn in my mashed potatoes! Quick note after watching the Summit last week: I went to the doctor to have some stitches out (elective surgery, no illness) and he was telling me about all the patients he had come in the previous day with heart disease, cancer and lupus and what a long day it was (there are a lot of retired people in our community who are most of his clients). He said he was thankful McDonald's was still open when he got finished so he could have dinner. UGH! His shelves are lined with big books that say HEART DISEASE in big letters. I feel like I should give him a different kind of book!

    I have the 6 QT and I just bought a basket that says it is "large" and fits either the 6 or 8 QT pot. Fingers crossed they're not lying to me! Lol!

    The 4 lb bag fit into my 6 qt. Instant Pot! I’d like an 8 qt. but it’s not in the budget right now. Just waiting for the potatoes to cook. Garlic is done and the bag of fire roasted corn is defrosting. Can’t wait to have my dinner. Thanks, ChefAJ for all of your kindness and effort doing these videos. Life is good ❤️

    Made it tonight in 6-quart IP (Instant Pot, not Insta Pot. Same 3 syllables. Might as well say it correctly.) I used 4 pounds Russets but next time will use what I'm sure are MUCH better, the Yukons. Russets are larger so I quartered them and cooked in IP liner with the 2C water. Next time I'll use the steamer insert so I can easily take the potatoes out and easily take the insert out and place it in sink where I'll have much better leverage to mash them. It's too heavy to take out when potatoes are in there. I'll remember to add the roasted garlic after the potatoes are mashed which will result in the garlic getting better mashed than mine did tonight. I added the frozen sweet corn after the garlic was done to the air fryer and I'll do that next time but will be sure to get the fire-roasted corn at Trader Joe. I took advice from a commenter and added about 1T of dijon mustard and about 1/4C nooch. I got 7 large containers, each one 1-7/8C, and it is VERY filling. Potatoes needed more liquid (due to using Russets) so I threw in aquafaba from DIY cannellini beans. Thank you, Chef AJ, for another great recipe! I also added into the airfryer 1 large shallot quartered.

    I use this without the corn and put in the fridge overnight then take out a third and slice into fries and air fry them.

    Thanks AJ, you're the best. BTW, I have the small one and the next size up (I'm guessing the 6 quart). So is the 8 quart a new size they came out with? Also, I'd love to have an instapot that is smaller than my small one. I think it'd be perfect for travel.

    Question: If you use the potato water from the instant pot for the mashing, could you just skip the basket and cook the potatoes directly in the water? Or is it better to keep the potatoes out of the water until needed?

      You may not want to use all the water so it's better to use the basket.

    I have been SO tempted to make mashed potatoes in the IP! I have the 6qt and was tempted to get a 3qt for rice and beans, but now you made me want an 8qt! I have a similar steamer basket, LOVE IT! Ooh question: I haven't been able to find that fire-roasted corn! Was this recent? I miss that corn, so flavorful and great for when corn isn't in season here.

      By the way, I made the recipe and would definitely add more roasted garlic. I used half of what CAJ used. Need to make a good mushroom gravy to accompany, but am currently very satisfied with Good Foods “plant based queso” as my topping. Great flavors and oh, so yummy! Costco sells it in LARGE tubs.

    I make these all the time, however, I add Trader Joe's garlic directly to the pressure cooker and cook with the potatoes. I will try roasting the garlic in my air fryer. I have also added peas instead of the roasted corn for a change

    I have a question about the Mealthy. Mainly, I had such problems with the Instant pots that I have bought and I thought I had defective ones, but last year Consumer Reports and Wirecutter Magazine had the same problems I had. For instance, when I tried to cook starches, particularly, dried beans, the Instapot would come up to pressure and then immediately shut off and that was every single time and Consumer Reports had the same experience. Plus, for things like rice, mine would undercook some and overcook some within the same pot and Wirecutter magazine had the same problem. On top of that, my Miso soup would spray the cabinets and I would spend a half-hour cleaning up so it wasn't exactly a time saver. There were other things than those, but it was a disaster for me. I had a different pressure cooker that I really liked, but it died in 6 months. I really, really love my Aroma rice cooker, and that cooks rice in 20 minutes and ended up being about the same time as the Instant pot by the time the Instant Pot went up to pressure and came down naturally and didn't cause as much mess, but it has a nonstick coating and I have brain problems so I really am still trying to figure it all out. I want to ask if Mealthy is good, but most people love Instant Pots and I am not sure if they changed their quality or not, but I hated every second.

    Could you use boiled potatoes and just mash them, instead of making them in a pressure cooker? As I don't have one, but I usually boil a batch of potatoes. Could I mash those and then add the roasted garlic from the air fryer?
