I'm a DC native and have never seen a chef actually recreate Mumbo Sauce. Chef John, you are absolutely my fave!!! Miles Long and Leo's actually had the best mumbo sauces in DC. Miles Longs is long gone and with Leo's under new management, I have yet to find a go-to spot.. But after seeing your video, I have to try your version. If its anything like the two spots I mentioned, I will definitely nominate you for the key to the city!!!
Funny thing is McDo just called it Szechuan Sauce, it doesn't have any typical Szechuan ingredients in it. Szechuans living here (Antwerp, Belgium) are upset about that.
im a DC native and I loveeeeeeee Mumbo sauce. (even though different carryout's mumbo sauce tastes different). The best one is from Good Hope Carry Out, if your ever in DC. Their's is pretty tangy, a lot of others are pretty sweet. Thanks for this video!
JD Marshall Mumbo Sauce. But don't go to any clean Carry Outs. I'm not kidding. Go somewhere that looks dingy. Also, different parts of town have different color/tasting mumbo sauce. NE/NW has an orange color, SE/SW has the color that Chef John went for.

The sauce it's self is vegetarian isn't it? You could put it on anything, tofu, bean burgers, veggie burgers, chick pea fritters. Oh I love chick pea fritters I may have to make some just to try that sauce on:)

Not to mention DC being the latest stop on the Michelin Guide's route. If you want something that speaks to our culture, eat at Ben's Chili Bowl, Oooohs and Aaahs, or Old Ebbit. Or if you want to know why our local chefs are world renowned try the Dabney, Bad Saint or The Inn at Little Washington.

I was once at a carry out and a man had ordered curry chicken, he also instructed the restauranteur to give him Mambo Sauce with it, she looked at him with a confused look, to which he responded "Don't judge me" :) we love it on everything!!

Bees make honey from local flowers. If you have any kind of allergy, using local honey can help you get over it. Whereas using a honey from far away can cause your allergies to be worse because you are being exposed to flowers that you aren't used to.
DC guy here, like the recipe and will give it a try. The funny thing about mumbo sauce is that every carry out makes it a little different. I know people who will only go to certain carry outs because of their mumbo sauce. Keep up the good work John.
Briggs or esskay meats have some of the best half smokes i had the fortune of eating growing up in the DMV.Always got the spicy ones from some of the street vendors downtown d.c. by the mall.

My local chinese take away in the south west of the UK has the same sauce since the 1990's, it is there sweet and sour sauce. Only they use dark brown sugar and is made with heniz #10 cans of ketchup, the pineapple is from concentrate, they add MSG, some cheap places use orange squash. not sure on there chilli choice it is in a 25kg sack with chinese writing. At home we use korean chilli flakes, apricot juice and dark brown cane sugar. Thanks for the recipe, brought back good memories as i met my missus when she worked there. Anni dafuq that dudes wrong. Distilled vinegar is usually 5-8 percent acetic acid, and white vinegar can easily be found in a range of 5-20 percent range.
distilled white vinegar is what you find in the oil/condiment section in the supermarket. its been diluted to 5% so its edible. there are other kinds of white vinegar, like the kinds you can find in a cleaning product aisle.

Anni dafuq that dudes wrong. Distilled vinegar is usually 5-8 percent acetic acid, and white vinegar can easily be found in a range of 5-20 percent range.
distilled white vinegar is what you find in the oil/condiment section in the supermarket. its been diluted to 5% so its edible. there are other kinds of white vinegar, like the kinds you can find in a cleaning product aisle.
