    Our Favorite Buttermilk Biscuit
1 stick butter, frozen- I used salted butter (1 stick equals 8 tablespoons or 1/4 of a pound)
    2 1/2 cups self-rising flour
    1 cup chilled buttermilk
    Parchment paper
2 Tbsp. butter, melted (to brush on top after the biscuits have baked)
**** When baking from the biscuits you've frozen (if you froze some of them) I found they baked better and rose higher at 450` F.
For the same amount of time. I put my frozen biscuits on the baking sheet and let them stay at room temperature until my oven reaches 450 F and then place them in the oven.
If NOT frozen, use the directions below:
    1. Preheat oven to 475°. Grate frozen butter using large holes of a box grater. Toss together grated butter and flour in a medium bowl. Chill 10 minutes in the freezer. THE FREEZING IS A CRUCIAL STEP SO DON'T LEAVE IT OUT!!!
    2. Make a well in center of mixture. Add chilled buttermilk, and stir until well blended (about 15 times).Don't stir more than 20 times or you'll have tough biscuits. The dough will be sticky.
    3. Turn dough out onto a lightly floured surface. Lightly sprinkle flour over top of dough. With a floured rolling pin, roll dough into a 3/4-inch thick rectangle (about 9 x 5 inches).
    4. Fold dough in half so short ends meet. Repeat rolling and folding process 4 more times, a total of 5 times.
    5. Roll dough with a floured rolling pin to 1/2-inch thickness. Cut with a 2 1/2-inch floured, round cutter, reshaping scraps and flouring surface as needed.
    6. Place dough rounds, side by side, in a parchment paper-lined jelly-roll pan. (Dough rounds should touch.) Bake at 475° for 15 minutes or lightly browned. Remove from oven; brush with melted butter. Serve immediately.
    Makes 12 to 14 biscuits.

I have tried I don't know how many times to make biscuits and they always end up in the trash. They were always falling apart and just not any good....I love to cook and I had some self-rising flour and buttermilk and thought I would give these a try....THEY WERE DELICIOUS....I told my husband that I was going to try biscuits one more time and he said "Uh Oh"...well he tried them...he ate 1........and then went back for 2 more....Please try them if you have never been able to make biscuits....you won't be disappointed. Thank you Hands That Cook....

As a son of the south, I grew up eating homemade biscuits prepared by relatives in the rural part of southeastern Virginia, in the area I referred to as "the country" whenever we visited from our suburban home. As a child, I remember fondly how delicious those biscuits were, often served with fresh butter beans, corn and country ham that were grown locally and prepared by my grandmother. I recently decided I wanted to attempt making some biscuits from scratch myself. So it was that I went looking for recipes on UA-cam. After findng your video, I decided to try out your recipe and technique. I must say I was truly shocked that my very first attempt turned out great! Since that first attempt, I have experimented with several other recipes, but your recipe really is the best recipe I have found. I have made them at least 3 times now, and they truly were no-fail biscuits every time! Thanks for sharing your technique!

This is the same as the recipe I learned as a child. My mother told me that if I didn't learn to make biscuits and bread I would never get a husband. She told my brothers if they didn't learn how to make bread their hair would fall out. People wonder how my Mom managed to get 6 sons and a daughter to learn to cook. She lied to us. End result, we can cook anything we want!

I made this recipe for the first time today (2018 July 19). It worked as advertised.
For years I'd tried to make Southern biscuits with ordinary flour, but the result was always tough biscuits. So I finally ordered White Lily self-rising flour via Walmart's on-line purchasing service, I bought real buttermilk at the local supermarket, and the result was real Southern biscuits.
MANY thanks for posting this recipe.

BTW, did you have a soft winter wheat flour or use a regular self rising flour? Annie, I'm proud of you for having the courage to at least try this. So many people won't. Freeze the unbaked biscuits if you don't want to bake them all at once. Simply freeze on a baking sheet and then into a zip lock bag with instructions. When you take them out of the freezer, let them sit on the baking sheet until the oven heats up to 475, then proceed as the instructions say.

annie b Hi Annie, I'm so happy to hear you say that! This is exactly why I made the video. I didn't want anyone else to go through 2 years of agony trying to learn how to make biscuits. Please get back to me and let me know how they turned out. May God Bless you too and thank you for taking the time to watch and comment.

Thanks for the recipe for No-Fail biscuits. Thanks also for the extra hint re chilling the dough before adding the buttermilk. It's just me & my husband, so I also appreciated the idea of freezing the dough rounds in a freezer bag with time & temp written on the bag. That way I can just bake what we "should" have, & save ready made dough for the next time or 2. I'll keep checking back!

Love it! Thanks again. We've used the southern biscuit flour for years. My daughter rolls the dough with a mason jar. Cuts Them as well using the jar. Just as my relatives did for the last century.

+Debbie's Back Porch Hey Debbie...they're perfect everytime. I've stopped making them any other way. Not because I made bad biscuits (they're good) but because this was so much easier and just as good. I'm going to use lard instead of butter or maybe half of each & see what shakes out. I really liked the way you make them but I'm afraid to try! I've watched a lot of really old women make biscuits and they make them the same way you do. I wonder if that's because the invention of the pastry blender wasn't around, but of course after making them that way for years, no one would want to use a pastry blender. I watch all your videos and have learned a lot about broth. I know right now I'll never make bone broth. It's too long a process and I don't have that much patience!! Good to hear from you!! Linda

I made these today and they are perfect! I followed your instructions to a 'T'. They made exactly 12 three inch biscuits, rolled out to a half inch thick before baking.
I used a clean, short blueberry can from a muffin mix with the lid removed .It worked perfectly to cut them. Ten minutes at 475 degrees for my thickness and oven. My son said that they were the best biscuits that he had ever eaten.Thank you so much for sharing.

Thank you so much for this video.. I have always shied away from making biscuits because I thought they were too complicated.. WELL, I made these tonite with our dinner and my family loved them.. I can only find Gold Medal self rising flour here where i live in NY and I think they may come better when I try that flour.. Today I used regular flour with Baking Powder added and Baking Soda.. I was SO HAPPY AND PROUD that I finally made Homemade Biscuits!!! And so wAs my family..But I want to improve them.. pThank you so much!.. I love your channel.

Thank you SO MUCH for making this video! I really like that it is a simple recipe. I also like the fact that I can freeze the dough because it's only me here, and I don't eat biscuits everyday. I am so glad I stumbled upon your channel because I truly enjoy watching your videos! I love it when Sammy comes in and has a taste test. The thing about your videos that upsets my little dog is the alarm that dings when someone comes inside your house. It scares my dog to death. She is afraid of smoke detectors and I guess it sounds like a smoke detector to her. But keep up the great work. I really enjoy your knowledge on the ingredients, too. Thanks again!! :)

    • @Handsthatcook
      @Handsthatcook  9 років тому +4

Ranita Todd Hi Ranita, I'm so glad I can be of some help. When you want to use a frozen biscuit, just put them on the baking sheet frozen and leave them out while your oven heats up. They are just as delicious baked from frozen as when I made them fresh. The sound you hear is my burglar alarm. Sam is in and out constantly. I'm so sorry it upsets your dog. I'm an animal lover too so I sympathize with you. I'll try to get him to stop going in and out of the house when I make a video.....but I can't make any promises that he'll quit. He has a lot of nervous energy!
