How To Make Saimin At Home! (Basic Hawaiian Saimin Recipe)

  • We are going to go into a very basic Saimin recipe to make at home! If you don't know what Saimin is, its very similar to Ramen but it was made in Hawaii in the early 1900s by immigrants who came to the islands to work on the sugar cane fields. It has ties to Japanese, Chinese, Filipino, Portuguese, Puerto Rica, and native Hawaiian cuisines! I miss visiting Oahu to see my friends during the spring and summer due to COVID-19 so I'm making it at home to bring me to the islands through food!
    What you need:
    Broth
    -8 cups of water
    -1 cup of dried shrimp
    -1 cup of Bonito flakes
    -Dried shiitake mushrooms
    -Kombu
    -Dried anchovies with head and guts removed
    -1/4 cup of Shoyu (soy sauce)
    Toppings:
    -Scrambled or soft boiled eggs
    -Fish cake
    -Green Onions
    -Roasted seaweed
    - Chasu or Char sui (optional)
    Noodles:
    Any ramen or saimin noodles (fresh or instant)
    Optional:
    Pork lard aromatic oil to give the bowl a little more aroma and add in a flavor that isn't fishy to the dish

    Great video, love saimin. The only thing we add to make the broth (dashi) is a piece of pork with some fat on it (this receipt was given to me by the owner of a saimin restaurant near Aloha Stadium.

    very entertaining recipe! i'm a bit of a ramen nerd as well and saimin is one of the things i've been wanting to try for a while. I actually took some heavy inspiration from the broth used in saimin when making my own simple recipe.

      When this is all over, go to Hawaii. The saimin is amazing but Hawaii is tied with Japan for the best food I’ve ever had!
