Me too. I searched for a golden stag beetle for 3 straight weeks. Finally found one when I was on the phone with my friend and the he startled me and I scared it away. Needless to say I was infuriated and disappointed.
I feel very bad for you, but I guess you have to wait. The summer months are were you can find a bunch of bugs and fish. However, you don't really find a lot of fish and bugs during the winter months in New Horizons.
Last year I was trying to get all the fish but that seemed like too big of a task so I broke it down into smaller sections and decided to just focus on pond fish. I was fishing like crazy all day everyday and I made SO much fish bait and a ton of small ponds around my island. It was working really well and eventually I only had one pond fish left to catch, but it was the last day I had to catch it and I only had 5 minutes left. I also didn't have very much fish bait left but I still ran to my nearest pond and started using my fish bait. After fishing out a few fish that were the same size as the one I needed to catch, I had 1 minute and 1 fish bait left. I threw the fish bait in, it was the correct size so I cast my line and.... I GOT IT. The time changed right after I got the fish and I felt AMAZING. It felt like I had just made a daring escape from something in a fantasy novel.
@@aurorathorosn5266 I'm with you on this one, it feels so rewarding knowing you waited a whole year for something instead of rushing it. But it is up to each player and same as non-time travellers shouldn't tell time travellers what to do, neither should people like Hal Draws tell Kora to time travel.
Literally the first fish I caught on the clifftop was a stringfish and I had no idea how rare it was until I googled its selling price (it went to Blathers of course, though)
Side note for string fish:it’s also spawns on second tier rivers as well as second tier ponds. I’ve caught it twice in the second tier river with out grinding and I’ve caught it once in the second tier pond. It’s incredibly rare to get it from the pond
I missed like half of those tree bugs in the summer, so combine that with starting at the end of May really doesn’t give me that much hope for the bug critterpedia.
I started playing in June because I didn't have a switch before March. So I'm missing out on march, april and may fish, bugs and sea critters. Additionally, for some reason I didn't donate a few creatures from June even though I had the museum built by then. So I'll have to wait even longer. It does still feel like time has flown by for me, but I didn't get to experience spring or bunny day (don't know if that's a blessing or a curse). So I still have the rest of winter, including the beautiful snow and the spring, including those wonderful cherry blossoms to look forward to! It has felt like I've been left out though not playing at launch, but I'm lucky to have my switch and copy of the game right now as it is, I won't get into why.
I got the pond smelt, yaaay golden fishing rod, buuuuuut I haven’t found lobsters yet, nor dung beetles. All I need left after that is a spider crab in March and the firefly squid which also in March. After that I’m pretty much done which tbh I would feel a little sad but happy to complete, it was a bittersweet journey ;w;, hope you find the fish, bugs and sea creatures you need ^-^
I can't wait for Dung Beetles to show up. It's the last bug I need! I only have 2 sea creatures and 3 fish left, too! I've just been having trouble getting a Tuna, but closer to the time it leaves I'll hunker down and make a ton of bait to beckon one.

I hope they have a ton of updates planned too. I did restart my Island last month so I will have a lot of past seasonal stuff to pick back up but I would love for that to combine with new things
The only bugs I'm missing are two palm tree stags from July/August. Here's the kicker: I had actually caught them previously, thought I had ALREADY donated them, and sold them. I had not already donated them. Yeah, it's rough.
I did find out one thing I didn't know before. I thought you had to donate each bug or fish before you can get the golden item. I caught every fish but forgot to donate one that won't appear until summer, but I still got the recipe for the golden fishing rod.
I just got the game a couple of weeks ago, so I still have a lot to collect :(. I hope they bring back old bugs next year for people like me who get the game later on, but also release plenty of new critters for second yearers to catch as well!
If I am correct you are missing the saddled bichir and it is available in my town right now! (Southern hemisphere) so if you want you could come catch it. :)

I have bad eyesight so for me I'm missing a ton of bugs that are on trees. I'm not missing as many fish but those damn c+ bass are getting in my way. The others are just river based fish mostly. I have bad luck with only getting the common ones.

Now that I was able to catch a flea in April I have now completed every museum exhibit
