great video! however i'm not sure if you got the basic types of ramen right. as far as I know, not the broth but the tare defines what type of ramen it is. so with shio, shoyu, and miso, there is only three types imo. clearly there is a large varieties of soups to pair them up but i have eaten tonkotsu with all three types of tare.
Except Pf Changs ramen was nothing like traditional ones lmao. American chinese food love to use strange, out of place vegetables for some reason. If you want ramen, just go to Japan and experience heaven.
