There's a very similar recipe in Switzerland, though it uses Gruyere and Emmental cheese and has a crust at the bottom. It's called chäschueche. Surprised to find out that Bulgaria has essentially the same dish, assumed it was quite unique to our cusine until today 😅
In socialist times, a lot of recipes were stolen/inpspired and rebranded from the western world, so they can be presented here in restaurants under "Balkan Tourist" (basically every restaurant in BG was state owned and under "Balkan Tourist"). So they wanted some fancy nice dishes for their restaurants, to attract tourists in Bulgaria. I wouldn't be surprised if they stole this from Switzerland :D

You can try with gouda, emental, edam, even with mozarella if you don't manage to find Kashkaval. I would aim for some eastern european show. I hear from my relatives in Chicago that there are some shops like that there.
They got popular.... like in the 2008-2010s, the noodles. Basically they are not considered student food here to be honest. But I see where you come from :D We have a joke for what a student sandwich is - 2 pieces of bread with a piece of bread in the middle :D Or for end of the month - water soup with ice cubes.
