When I first saw the image, I started because I wanted to make it so much.
It was a really fun job, as I thought.
The recipe was made by me.
Flavored with banana chocolate mousse, chocolate ganache and almond hazelnut praline. The taste of the dark chocolate tart is really amazing.

Ingredient

240g cake flour
84g sugar powder
1 g of salt
96 g butter
44 g eggs
2g vanilla bean paste

1 egg yolk
15 g sugar
1 g of gelatin
40g fresh bananas
55g dark chocolate
70g whipped cream

By the way, did you use raw hazelnuts/almonds or toasted ones?
it looks like raw ones since theyd get a bit toasted in the pan anyways but you could use toasted ones too, it would work either way :)

HERMOSO GIRASOL | TARTA DE CHOCOLATE
0:24 ♥︎ Tarta y pétalos (Cuatro tartas de 9cm)
240 g de harina para pastel
85 g de azúcar en polvo
1 gramo de sal
96 g de mantequilla fría
44 g de huevos
2g de pasta de vainilla
5:05 ♥︎ Mousse de plátano y chocolate
45 g de chocolate negro
18 g de crema espesa/crema de leche/nata
15 g de azúcar
1 yema de huevo
1 g de gelatina
70 g de nata montada/crema batida
40 g de plátanos frescos licuados
7:44 ♥︎ Ganaché de chocolate
56 g de chocolate negro
50 g de crema espesa/crema de leche/nata
6g Kahlúa (licor de café)
9:03 ♥︎ Praliné de almendras y avellanas
40 g de agua
60 g de azúcar
30 g de almendras
30 g de avellanas
Preparación:
TARTA Y PÉTALOS
0:22 1. En un procesador mezclar la harina para pastel, azúcar en polvo y la sal. Luego la mantequilla y por último los huevos y la pasta de vainilla. Se tomará 240g de la masa para realizar la tarta.
1:29 2. Mezclar el resto de la masa con 1 gota del colorante amarillo y 2 gotas del colorante amarillo-dorado.
1:46 3. Enharinar la masa, cubrirla con una lámina de teflón o papel para hornear y extenderla con un rodillo hasta que alcance un grosor de 3mm, y luego llevarla a la nevera por 3 horas. Usar un anillo de 9mm de diámetro.
3:41 4. Forma círculos con un cortador redondo de 4.2cm de diámetro para los pétalos. Se necesitarán 12 pétalos por cada tarta. Congelar por 10 minutos.
4:07 5. Corte cada círculo en la mitad con un cortador de galletas. Ubicar los pétalos en una fuente para hornear y hornear en un horno de convección a 150°C por 4 minutos o en un horno convencional a 170°C por 4 minutos. Luego cúbralos con una lámina de teflón (esto evitará que los pétalos se quemen) y hornee por otros 6 minutos más.
MOUSSE DE PLATANO Y CHOCOLATE

6:22 3. Colar la mezcla sobre el chocolate, agregar la nata montada y el plátano licuado (mezclar entre cada adición). Llenar cada tarta con el mousse y llévela al congelador por un rato.
GANACHE DE CHOCOLATE
7:44 1. En un recipiente mezclar el chocolate negro con la crema espesa caliente y kahlua. Cuando la mezcla haya alcanzado 30°C verterla sobre el mousse. Refrigerar por 4 horas.
PRALINE DE ALMENDRAS Y AVELLANAS
9:03 1. Agregar agua y azúcar en una cacerola y llevar a la estufa cuando esté hirviendo a una temperatura de 120°C agregar las almendras y avellanas, mezclar y apagar el fuego. Seguir mezclando hasta que las almendras y avellanas queden cubiertas en el azúcar.
9:49 2. Volver a poner el fuego a bajo y mezclar hasta que se torne de una coloración ambar. Deje que enfríe sobre un recipiente forrado con papel para hornear. Cortar finamente cuando ya esté sólido.

한가지 조꽁드님 의견을 묻고싶어요.
제가 쓰는 오븐이 가정용 오븐인데 제품을 넣고 구우면 오븐온도계 상으론 내부온도가 맞춰둔 온도를 넘어서 계속 올라가더라구요ㅠ이럴땐 오븐앞에서 오븐온도계만 믿고 온도 오를때마다 오븐문 열면서 내부온도를 맞춰야할까요
아님 온도계 신경안쓰고 그냥 구워서 제 오븐온도를 찾아가야할까요ㅠㅜ
베이킹카페에 물어보니 '온도계는 즉각적인 온도가 나오지않기에 믿지말고 그냥 구워라' 등등 여러의견이 나오던데 어떡할까요...😭

저도 사실 그래요 제 오븐은 스메그 인데요. 제가 160도 맞춰 놔도 오븐안에 넣어둔 온도계는 170도 180도 막 올라가요.
그래서 제가 생각한것은 일단 가장 기본이되는 아이템을 구웠어요. 제누아즈 같은거요. 그럼 보통 컨벡션에서는 160도에서 30~35도 구우라고 하잖아요.
그런데 구웠더니 너무 케이크가 제 시간보다 빨리 부풀고 빨리 쪼그라 드는거에요.
그래서 내오븐 온도는 설정 온도보다 높구나 라는것을 알았어요 .
그래서 사실 그때부터는 온도계를 2개 정도 오븐 안에 넣어 두어요. 그리고 그 온도계를 믿는 편이에요. ㅎㅎㅎ 오븐이 이상하게 처음 샀을때 보다 온도도 바람도 쎄지더라구요. ㅠㅠ
이 경험이 도움이 되었으면 좋겠네요. ^^
