For your Maiza flour, we have wat we call Garri" . Its made from cassava and we make "Eba" with it. We prepare it the way u prepare ur Maize flour. We also hv other "swallows" - ie, (ur Maize flour. )Dats d way we call here in Nigeria. These "swallows" can be eaten with any kind of soup. Taste yummy - yummy !!😋. Hi Joy. I am a coastal lady from Mombasa. I normally soak my omena with warm water for five minutes. Then proceed to wash it with warm water until it looks silver-like in colour. On the last step of washing I usually use cold or room-temperature-water, then strain the water. 2. Pan dry the omena on medium heat. 3. Shallow fry the omenas until they are almost brown, then I add sliced onions, freshly crashed (in pestle and mortar) ginger and garlic and a pinch of salt until the omena are golden brown and crispy. 4. I prepare tomato stew full of spices and herbs as per my preference. 5. Serve with soft warm- hot sima (ugali). In other words, I do not cook omena and tomato stew in one pan. I feel like tomatoes and other spices weaken the aroma of crispy fried omena. (My opinion and observation).
Oh! that was awesome, here in Zambia we call it Kapenta and its prepared the same way except for the ugali us we use first luke warm water hot enough but not hot to make those balls meal meal is added like its porridge then when the porridge boils thats when we add more meal meal thick enough as you've done good nsima as we call it here is not supposed to stick in your hands we also cover it even several times then its done. That was perfect cooking.

In Tanzania Omena is called dagaa. Most people prepare omena in the same way. But others add coconut cream or peanut butter. We have different types of omena
I'm Zambian. Omena is called Kapenta here and Ugali is called nshima. I cook the silver fish just like you but for the nshima i start by warming water add flour to make it a soft porridge then let it boil then add more flour to the texture of choice. Its a lovely meal.
Very delicious meal. My mouth is watering now. I love that meal myself. That's how I cook it. Yap! Its very rich in Iron. I am a swahili living in Mombasa, Kenya. It's not my traditional meal but I love it.
In Zim we cook Mathemba/Kapenta (Omena) the same way or we soak Mathemba in water for 5 mins and fry onion, tomato mixed with spices then you add mathemba and simmer for 5-7 mins. Or just fry in soup until its brown and add any coating. For Sadza (Ugali) we boil water then mix cold water and mealie meal (maize flour) aside just a little and add to the boiling water and stir until its like porridge then leave it cooking for some minutes then add mealie meal as required but don't make it hard. serve as you want.

Then heat my pan , fry my onions afterwards put my tomatoes (some salt) and lastly put my omena . The last part I add some milk 😋😋 Joy you should try to add some fresh milk I'm sure you loves will love it (. That's if you take milk 🤤)
Hi Joy and Tom, thank you for sharing. @Joy, I am Nigerian and we make some of our swallow just the way you made your ugali though there are different techniques to making it. Amala, poundo yam/potato, semovita, oat swallow, are made the way you made your ugali. Though garri is mostly made without putting it on the stove top. I do fish like that but we preserved it with salt in Trinidad and Tobago we called it corned fish but it's prepared and cooked the same way. We do the bigger fish but we cut it up in small pieces and cook the same way

I don't like the smell but the way you cooked it , I think am going to try your recipe... Teach Tom more African things as you learn the western ways and their food. In uganda. I cook it the way you did but mixed with egg plants some times cabbage. I also cook it with occra and paste. Or with greens called layi or ottigo and paste with peanut bata.(roasted ground nuts then pounded) Some times i mix it in beens. And some in Binyebwa i.e pounded groundnuts

I love omena 😋🤤 I almost licked the screen 🥺🥺
I first wash it (omena) with hot water then deep fry it in some little oil . Then heat my pan , fry my onions afterwards put my tomatoes (some salt) and lastly put my omena . The last part I add some milk 😋😋 Joy you should try to add some fresh milk I'm sure you loves will love it (. That's if you take milk 🤤)

Hi Joy and Tom, thank you for sharing. @Joy, I am Nigerian and we make some of our swallow just the way you made your ugali though there are different techniques to making it. Amala, poundo yam/potato, semovita, oat swallow, are made the way you made your ugali. Though garri is mostly made without putting it on the stove top. You just stir your garri in very hot boiled water.

Tom has really enjoyed. As for Me after frying the silver fish like you have done i add some water for soup and sometimes I mix it with G.nuts sauce. Ithink one of these days iwill prepare it like you and I see

I do fish like that but we preserved it with salt in Trinidad and Tobago we called it corned fish but it's prepared and cooked the same way. We do the bigger fish but we cut it up in small pieces and cook the same way

I don't like the smell but the way you cooked it , I think am going to try your recipe... Teach Tom more African things as you learn the western ways and their food. I cook it the way you did but mixed with egg plants some times cabbage.
I also cook it with occra and paste. Or with greens called layi or ottigo and paste with peanut bata.(roasted ground nuts then pounded)
Some times i mix it in beens.
And some in Binyebwa i.e pounded groundnuts
