My Mother is Japanese but my dad was like you, but instead of being a different he became an English teacher in Japan, his Japanese became fluent, I just found it cool how you had a similar experience to my father.
as a chef, lemme give you little advice. Try to keep your non cutting hand in a claw shape and keep the knife on the same line to your knuckles, this will keep your fingers out of the knife's way, theres some videos showing the position. Also when you cook, be confident, even if you dont know how to cook, the more confident you are the better it will be :D
and try to find your feel good position on the knife, most usual and comfortable position that restricts the knife swabbling is holding it from the steel right before the handle, to your handle, hope that helps even a bit on your cutting skills.

That is called an offset spoon, it makes skimming/basting/tasting easier because the spoon can go deeper into a dish or pot without tilting at an angle.
