First of all, thank you so much for your recipes. I made this cake the other day for the first time (the first of any recipe I make is always an experiment), and it turned out pretty good. I had to blend my wet ingredients in two parts as my Vitamix began to strain with the weight of the mixture, and I had to leave my cake in my old electric oven longer than 35 minutes (a little more than an hour, just to be sure), but it came out dense, moist and tasty. And the icing is to die for--it takes the flavors over the top. I've been eating cake for breakfast and evening dessert for two days now. My friends are coming over this weekend to try it--they can't believe I made a cake (I have never attempted anything so ambitious before). I can't wait to try it again (all my new recipes get better the more I make them). I think it is dense cake because of the dates and oatmeal, but I don't mind that. It's moist, tasty and healthy. I love it. Thank you so much. 🥰

I made this tonight. As it was cooking the smell was amazing. For some reason it didn't seem to rise as high as what you showed in the video. It could have been a couple of things, I didn't grind the oatmeal well enough, I use rolled oats but it was the quick rolled oats, not sure if that made a difference or not.. Also it could have been my baking powder even though it was still under the expiration time frame. I will definitely make it again and also try making one using the Granny Smith apples as well as carrots. Thanks again for sharing.

@@kefirheals7383 Good, but a little mushy on the inside. I don't know why because I know I didn't grind the oat too fine. I could still see bits of oat here and there. Also, I think I want to increase the spices. I really like to smell and taste the spices, and being older, my senses need a little help. So I'm thinking. 3 tsp. tsp. cinnamon, 1 1/2 tsp. allspice.
Also, Jill, if you're listening, should I up the temp or down the temp and cook longer? I checked with a toothpick, and let it cool in the pan 15 min. and cooled over a wire rack. If it's still mushy, what do you recommend?

So dissappointed....I followed the recipie bit used maple syrup in place of molasses....ive left it in the oven for an extra 20 mins and it is still like dough inside. my bundle pan is metal so I thought that's why it's taking longer but I just think it won't dry out no matter how long I leave it in the oven. Did anyone else have this happen?
