- As a fan of Max's chicken, I consider hacking this recipe an achievement! To be able to recreate my favorite dish at home pretty closely, ibig sabihin nakarami na rin talaga ako ng kain sa Max's! If you want to try making this iconic fried chicken, try this recipe below!
Of course, I don't mean any copyright infringement. Kitchen experiment lang ito as a fan. The best pa rin ang sarap to the bones!✌️

Fried Chicken a la Max's
Ingredients:
1 tbsp whole peppercorn
1 whole garlic
2 tbsp rock salt
1 bunch tanglad / lemongrass
4 tbsp patis / fish sauce -- separate into two batches
1 whole red onion, halved
4 pcs bayleaf
1 whole chicken
4 cups water
1 liter oil (enough for deep frying)
1 tsp ground pepper
1 tsp dried basil, ground
1 tsp thyme
1. Create poaching mixture. Boil 4 cups of water. Add onions, garlic, rock salt, ground pepper, basil, thyme, bayleaf, and whole peppercorn.
Simmer to medium heat.
2. Stuff the chicken with tanglad / lemongrass. Rub 2 tbsp of patis/ fish sauce to coat the chicken. Marinade for 5 minutes.
3. Poach the chicken over low-medium heat. The flesh will turn white but the skin should be intact. 1 kilo of chicken should poach at approximately 30 minutes. Do not boil.
4. Remove the chicken from the poaching liquid. Remove any herbs and spices stuck on the skin. Rub the remaining patis / fish sauce all over. Let it rest until dry (approximately 10 mins).
5. Pre-heat oil in pan.
6. Once the chicken is dry, and oil is bubbling hot, deep fry it until light golden in color.
7. Remove from the pan, let it rest for a minute.
8. Slice and serve! Best served with banana ketchup and Worcestershire sauce.

dun s ibang batch napansin ko nmn mas ok maa matagal mo i rerest with the patis after par boil. ttry ko next time hindi i boil poach lang gaya dito s video
