I'm 40 and hunted ducks all my life. The biggest reason for "gamey" flavor is the membrane and silver skin on the outer side of the meat. It will come off by pulling it with your fingers under running water and a little help from a knife. After you remove it, (doesn't have to be perfect) put your duck breast in a bag and cover with water, soaking it for 12 to 24 hours, changing the water every 2 hours or so. After it has soaked, removing all the blood, then marinate in whatever you'd like for another 24 hours. For the grill, I like using watchyoursister sauce 😉, A1, and a rub of your choice. No need to beat the snot out of them with a mallet, just grill your duck like a steak to a medium rare to medium temp and serve with your favorite sides. You can also do stir fry, fajitas, stroganoff, or grind the duck and make lasagna, hot pockets, and burgers. Hope this helps for a better duck dining experience. I live in South Carolina- I went duck hunting once - had to get up early -drive to a public state duck hunting area and sit in the cold weather- we had no dogs- we saw a couple of ducks but I could not tell the difference between the different types of ducks so I didn't want to get fined. Here you are - a waterfowl pit, 2 TVs , portable heaters, dogs, a grill, a place to take a nap and you have a bunch of ducks flying all over the place! Looks like fun!

Nugget them up, soak in salt water for a day or 2 then drain and pat dry, get your favorite itialian dressing and marinate the nugs in it for 2 days then bread then with flour and fry them nuggets up, but dont over fry them they will get dry. Enjoy!
Duck def has a very gamey taste to it. When I do make it, I like to drown it in a small bowl of soy sauce, but this is gonna be weird to most, but i like to mix a tablespoon of horse radish into my soy sauce, its a taste thing, some like it, some dont. 1 unbroken habernero and McCormick Italian or McCormick teriyaki, Sauté to med rare! Don’t eat the pepper. Either way is rad! Pintails my favorite. Green wing are second. Beyond those 2, you must get the silver skin off. Rad!

Best way I found to get the game taste out of any meat is 1 when processing the meat, remove the meat from the breast bone and bag and freeze them in salt water. This helps remove the blood. 2 when ready to use, Rinse and re-bag with lawyers stake and chop sauce over night. You will never do duck or dove any other way after this. Just try it.
here is a great marinade for you 1/3 cup dark soy, 1/3 cup redwine vinegar, 1/3 cup of oil, 4 hours in the fridge .i like mine medium rare 140 internal on the bbq
Little pro tip for you to try, use your food saver vacuum and put whatever meat you want marinated in a food saver bag with the soy sauce and pull it down until it starts to get to the top of the bag then seal it, usually 2 hours later is perfect! Remember like you mentioned tenderize your meat before you vacuum seal it.
Best way I've found to have duck without the gamey taste(which I don't actually mind) is double fried. Bread it the first time using egg and cornmeal then deep fry it. Take it out and bread it with beer and Drake mix and deep fry it again. Super crispy and absolutely delicious.

Cube it up 3/4 inch pieces marinade in Worchestershire sauce n Italian dressing, then wrap in bacon with a little chunk of cream cheese and a piece of jalapeño, skewer cook on smoker or grill and enjoy
Its hard to get the gamie flavor out so you need to use big flavors to match the wild meat. Like a berry and whisky or citrus and rum ... oh and check out some Asian recipes they do duck well . I bet it would probably work for goose to .wines work and beers have fun with it
what I do with Duck , cut breast in strips, marinate it in Caribbean Jerk from masterpiece for a day , cut a Jalapeno in half , remove seeds , wrap in bacon , put on grill until bacon is done and meat will be med- rare .. tastes great .good luck and great vids
I do similar things with duck and goose. A good buttermilk soak works pretty good also, and I like to butterfly the breast and stuff it with onions and olives/pickles, pin it together with a toothpick especially if smoking/grilling

Try wrapping ur duck/goose in thin cut farmland Hickory smoke bacon Right b4 it's done, cover in Curleys regular bbq sauce. It's like spicy filet mignon!

Try the duck rare less gamey taste. Soak in salt water for 6 hrs. Olive oil and garlic in a pan really hot 2-3mins a side
My uncle always marinated wild game (deer,duck) in Pepsi or Coke to take the gaminess out. Soaked it overnight.

We marinate duck in shoyu, Apple cider vinegar, minced garlic and brown sugar to balance with the shoyu. Go by taste. It's a local favorite in Hawaii.
