Hi from Oregon! Just subscribed and have been skimming through the videos on your channel. I am just overwhelmed by all the fantastic homey, comfort type, dishes you’ve got here. I’m excited to see all the traditional type dishes from the UK but also amazed at the variety of dishes you include from other cultures as well. Are you a real chef? You must be to have such a huge range of dishes in your repertoire. Iwill be looking forward to trying some of these yummy looking recipes though I don’t own a air fryer. Just a stove, oven and microwave. I’m currently living with my mother taking care of her as she is in her 80’s and recently diagnosed with Alzheimer’s but she also has diabetes with some problems with her digestive system so cooking for her is a challenge. She grew up on a dairy farm so she’s used to good food cooked well. I think she might really enjoy a lot of your dishes.

That reminded me of my mother's Farmhouse Cottage Eggs from Lancashire - in a very large pudding bowl, mashed potatoes lined inside the bowl, similar eggs cooked peeled put inside, a cheese sauce covered the eggs, then grated cheese on top and grilled. ENJOY!

when I first got married we had invited my in-laws for dinner. One of the dishes I made was Colcannon. My father had in happy tears. This was something his mother made and he hadn't had it since she passed away. He has long since passed away but, I still make it. Very yummy
I have never made colcannon, but since I saw the recipe a few years back I have always wanted to make it. I've been watching your videos, and it has just increased my interest in colcannon. Today I have some potatoes, spring onion, cabbage and minced lamb I need to use and I'm going all rogue and make this dish with that minced lamb. Wish me luck :D

Rik since watching you I have been doing variations of mashed potatoes dishes such as you do and I will do this version but I am going to use poached eggs and chopped Brussels sprouts and Spanish onions plus streaky bacon as this is what I have on hand and this will be our brunch today. I did the version with rhutabager (Sweed)and we loved it.I use my instant pot to pressure cook many root vegetables simultaneously which saves time and energy. I learned how not to over cook using this method.Thanks for your fun,informative inspiring cooking show.

That dish is great. A short check showed that all ingredients are present in the kitchen. It´s still some time to St. Patrick´s day and I´m not Irish. I don´t care. The dish is delicious and easy to make. It´s getting an appearance on my table on St. Patrick´s day. I get the feeling that the Irish and Scottish cuisine are right in my lane.
We had a similar dish at school dinner, same idea but just plain mash with a cracked uncooked egg in the delve and then cooked in the oven until the egg was cooked through not runny...
After watching your video on colcannon last week, I made it and decided to throw a poached egg on top. It was wonderful. Now watching this video, I'm going to do it again soon with the bacon and maybe with a little grated cheese prior to baking and then an egg on top. I'm cooking for one so the four soft boiled eggs just isn't practical for me but it is still MAGNIFICENT with the egg on top! Can't wait to try this with the bacon. Thats something there(though i dint eat pork and would chainge it smoked turkey😁)i just love the combo of smashed potatoes, onions and cabbage❤ We make casserole with cabbage here in finland and do that stirring in butter after boiling the cabbage. That is my lunch for today. Don’t have bacon but a pork sausage will work as well. I always break the shell of the egg before putting in the cold water. It prevents the egg from cooking any further and a black ring round the yolk. 17:01
Made my first batch from your other video. Didn't have spring onions so used yellow onions cooked in butter with milk added towards the end. Half cabbage half potatoes. After mixing I fried up patties in more butter. Egg on top. Very tasty. Thanks from the northern US. Will try it with bacon next time.
I could feel my cholesterol going through the roof just watching all of that butter going in. I love colcannon, so I'm going to try it next week. If I have a heart attack, I'll blame you! 😊
I have a ceramic hob (never again! I hate the darned thing) and the way I have to do boiled eggs is to get a pot of water up to the boil then turn off the ring, put the room-temperature eggs in (5-6 mins for soft and 8 for medium hard. No longer than that). And I run icy cold tap water over the eggs to stop cooking them. Finally, I gently tap the shell all over, pick some shell off the wide end and continue to peel using a teaspoon (make sure it is under the membrane). I think I will try your vinegar trick in the future, tho! Might be an invaluable tip especially for peeling soft boiled eggs.
Something else I like about your channel is that your pots and pans are obviously well used! Mine have developed a sort of 'patina' after years of use and I love seeing yours looking the same as mine! And I like your kitchen set up, too, and am shopping for a table top gas burner like the one you use. I have an electric stove, and can't afford a new gas stove at present but one of those single burner things would be perfect! Oh, and this recipe looks great, too! And lucky me! I have everything I need to make it on hand without going to the store! (Except for the gas burner....LOL!) Keep it coming for us, Chef! PS: Maybe you should add some merch to your channel, like mugs or t-shirts with "Looooook ..aaaat….thaaaat" printed on them!
Looks scrumptious! I'll take that to traditional colcannon any day! Surprised that the soft-boiled eggs remain so after the additional 20 mins in the air fryer.
Boiled bacon with cabbage boiled in the same pot, served with potatoes is Ireland's national dish. It's absolutely delicious. In the old days, you'd have had potatoes and cabbage left over after the meat had been eaten so Colcannon would've been a perfect way to make e meal from the leftovers . Bubble and squeak would be similar. If the cabbage is boiled in the bacon water it elevates the flavour a thousand fold
Lovely agree with one of you commenters welsh cakes, but to late already St Davids day I think. Ramp it up for St Geourge Day still have time. Never seen a frying pan so high, does it have a special name? Allmost a wock pan thanks.

Rik since watching you I have been doing variations of mashed potatoes dishes such as you do and I will do this version but I am going to use poached eggs and chopped Brussels sprouts and Spanish onions plus streaky bacon as this is what I have on hand and this will be our brunch today. I did the version with rhutabager (Sweed)and we loved it.I use my instant pot to pressure cook many root vegetables simultaneously which saves time and energy. I learned how not to over cook using this method.Thanks for your fun,informative inspiring cooking show.

That dish is great. A short check showed that all ingredients are present in the kitchen. It´s still some time to St. Patrick´s day and I´m not Irish. I don´t care. The dish is delicious and easy to make. It´s getting an appearance on my table on St. Patrick´s day. I get the feeling that the Irish and Scottish cuisine are right in my lane.

We had a similar dish at school dinner, same idea but just plain mash with a cracked uncooked egg in the delve and then cooked in the oven until the egg was cooked through not runny...

After watching your video on colcannon last week, I made it and decided to throw a poached egg on top. It was wonderful. Now watching this video, I'm going to do it again soon with the bacon and maybe with a little grated cheese prior to baking and then an egg on top. I'm cooking for one so the four soft boiled eggs just isn't practical for me but it is still MAGNIFICENT with the egg on top! Can't wait to try this with the bacon. We make casserole with cabbage here in finland and do that stirring in butter after boiling the cabbage. Gives extra taste.

That is my lunch for today. Don’t have bacon but a pork sausage will work as well. I always break the shell of the egg before putting in the cold water. It prevents the egg from cooking any further and a black ring round the yolk. 17:01

Made my first batch from your other video. Didn't have spring onions so used yellow onions cooked in butter with milk added towards the end. Half cabbage half potatoes. After mixing I fried up patties in more butter. Egg on top. Very tasty. Thanks from the northern US. Will try it with bacon next time.

I have a ceramic hob (never again! I hate the darned thing) and the way I have to do boiled eggs is to get a pot of water up to the boil then turn off the ring, put the room-temperature eggs in (5-6 mins for soft and 8 for medium hard. No longer than that). And I run icy cold tap water over the eggs to stop cooking them. Finally, I gently tap the shell all over, pick some shell off the wide end and continue to peel using a teaspoon (make sure it is under the membrane). I think I will try your vinegar trick in the future, tho! Might be an invaluable tip especially for peeling soft boiled eggs.

Something else I like about your channel is that your pots and pans are obviously well used! Mine have developed a sort of 'patina' after years of use and I love seeing yours looking the same as mine! And I like your kitchen set up, too, and am shopping for a table top gas burner like the one you use. I have an electric stove, and can't afford a new gas stove at present but one of those single burner things would be perfect!
Oh, and this recipe looks great, too! And lucky me! I have everything I need to make it on hand without going to the store! (Except for the gas burner....LOL!) Keep it coming for us, Chef!
PS: Maybe you should add some merch to your channel, like mugs or t-shirts with "Looooook ..aaaat….thaaaat" printed on them!

Boiled bacon with cabbage boiled in the same pot, served with potatoes is Ireland's national dish. It's absolutely delicious. In the old days, you'd have had potatoes and cabbage left over after the meat had been eaten so Colcannon would've been a perfect way to make e meal from the leftovers . Bubble and squeak would be similar. If the cabbage is boiled in the bacon water it elevates the flavour a thousand fold
